  • DAMN thatloookgood!

  • i gotta get some baby cow juice! :)

  • -_- baby cow juice...

  • I added a little jamaican jerk sauce and it was rediculously amazing

  • I introduced my dad to you so I could get him to cook your recipes for me. He made this and it was easily one of the best meals I've had in ages. Thank you!

  • Hmm, how do you continue cooking in the same pan without having the frond burn? Even when cooking on lower temperatures (and it never gives a good browning on meat when low) I always get some bitter burnt frond flavor. I've even tried using different pan types, ie, stainless, non-stick, cast iron.

    Any suggestions?

  • Looks GREAT... can't wait to try, thanks for sharing.

  • Made these braised short ribs. My parents slaughter their own beef, and usually don't keep the ribs, but I begged for the ribs this year, so I have about 15 packs of short ribs to play with this year! I improvised using Lilet, what I had in the bar, and my thyme is lemon thyme. Adapted it to the crock pot instead of the oven because it's between 105 and 110 here every day, now. ;) Thanks again, Chef!

  • The top comments always spoil the jokes.

  • You shouldn't drink cooking sherry? Who knew? Do I have to give up antifreeze too?

  • Baby cow juice!

  • This is seared and stewed/poached, not braised. Looks great but braising uses only a small amount of liquid.

  • veal broth, also known as "baby cow juice" -- you are such a charming cooking voice!

  • Chest cam was sweat should have your own wii game

  • btw if you're drinking cooking sherry... you've hit bottom, time to get some help. So dont drink cooking sherry.... dont do ANYTHING with cooking sherry.

    Made me laugh :))

  • This looks delicious!

  • LMAO! the drinking cooking sherry joke is Hilarious.... Love your Videos..

  • I will definately try this recipe for Xmas:)

  • I made this. It was delicious and the meal it felt soooo fancy. Thank you as always, Chef John. You are the coolest. :)

I used cheap fruity red wine. Hopefully it was better than cooking sherry!

  • Just subscribed. Very enjoyable and educational. Thanks so much for posting. Will look for the book asap. Great job, Chef.

  • Baby cow juice... mmmm... When are you making roast suckling pig?

  • can i replace the dutch oven with an all-clad pot or saucepan?

  • Cook all your favorite meals from Olive Garden, Outback Steakhouse, Chili's and more right from your home! - youtube.com/watch?v=6ktnVmKZXOo

  • So cooking this for dinner. Will let you know how it turns out. I love all your recipes!

  • Can I use oxtails for this?

  • Hey Sherry was Frasier and Niles Crane's aperitif of choice

  • i don't know why i hate meat that is close to the bones :s !

  • Made these today, and they were amazing! Thanks for another great recipe, Chef John. I've learned so much on your site.

  • Baby cow juice.... yummy.

  • lol "if your drinking cooking sherry....youve hit bottom." haha i love that

  • @missfitt820 Iv'e always used nothing but Savory & James Cream Sherry for any recipes calling for Sherry in it.? & it really picks up the recipes flavors.? Just a quick tip.?

  • Respond to this video... How about adding carrots & celery to this recipe & can it be done in a crock pot.?

  • @ALEX165ALICKI Yes. Instead of flour, add some mini tapioca to thicken the sauce in the last 2 hours of cooking. But make sure to sear the meat and sautee (caramelize a little) the veggie in high heat before you put them in the crock pot. It adds so much flavor to the dish.

  • HAHAHA Baby cow juice. Awesome.

  • Looks really great and I want to try it sometime, problem is, I don't have a dutch oven (not enough storage space for it too). Would this work in a crockpot as well?

  • man that looks delicious!

  • I got some short ribs yesterday but was wondering what I'd do with them. And then Chef John answered with a recipe.

  • Thank-you.

The problem with replacing the taste is that nothing else really replaces the taste or alcohol's reaction with flavor compounds.

With evaporating alcohol, the more water you have, the less you will cook out alcohol. And braising by its nature requires liquid.

I suppose that something like Chinese black vinegar or sherry vinegar (forgot) would enhance flavor. Won't be the same, but it will taste good.

  • I made this today. It was totally superb!

    Thanks John,

    Don

  • stop saying caramalised! thats adding sugar! like caramel! ARRG!

  • It also includes using NATURAL sugars in foods, like onions. "ARRG"

  • wow that looks good im gonna try and make that hopefully it comes out looking like that cause i have a big family so i gotta cook more so do i need to make big changes or can i still follow your steps but just add more

  • LMAO Baby Cow Juice!! That was sooo funny John. Great video.

  • Hahaha so true... classic.

  • Not all of it disappears. And some people just don't want alcohol on principle.

  • yum

  • i hate your videos, it also makes me hungry :D

  • Mmmmmmmmmmmm!

  • BABY COW JUICE!

    You brilliant and sick man...

I love you, Chef John. You make my eating world a better place.

  • Your kitchen humor is sick and twisted. I love it! Baby cow juice indeed! Mental picture or a baby cow and a large citrus reamer. LOL.

I know of sereral dishwashers who would steal the cooking sherry and extracts.

  • this looks awesome good. I think I will have to make some later this week. Yumm!

  • haha " Baby cow juice" hmm

    1:53

  • honestly I don't think any other phrase makes my mouth water as much as BABY COW JUICE.

  • I need to get me one of those dutch ovens. They're so useful. And expensive. O_O

  • Got mine at Wal Mart for a steal.

  • REALLY NOW? awesome. I'll have to check it out. thanks. :D

  • @Brandonsanity

    really expensive

  • especially for a nice one.

  • Walmart has one for $45. It got a good review from Cook's Illustrated.

Target has one for $65, also reviewed well. I believe it is a Tramontina, who does good stuff.

These are about 6 quarts. Much cheaper than Le Creuset. Both are enameled.

Lodge has enameled, but the bottom curves up, leaving less surface area.

Mario Battali did well in their tests, but now you are looking at $100. Since it didn't do any better, I'd skip on that one.

  • You make cooking look so simple. Thanks.

  • This looks good, even though i dont eat meat =)

  • Are you allergic to meat?

  • No, im a vegetarian

  • Wonderful. Haven't had this dish in years.

  • You make everything seem so simple and accessible. So glad I found your videos. I've made your clams casino and they were great. Thanks!

  • That looks nom-licious!

  • I like to make a "baby cow juice" & cooking sherry cocktail. Good stuff.

  • looks tastey

  • Chef John, you da man!

  • Awsomee and ass allways enjoy ;p

  • baby cow juice. Nice name

  • I don't like this new style of yours John. You are doing a Ramsay and just showing video cuts of the items already in there.

I for one liked it much better when we saw you put in the beef, Bacon. Other stuff etc. It just makes it feel more complete and not just like you've botched a few .jpg's together for us =/

  • i agree !!!!!!!!

  • I noticed that too and it sucks, but I guess it gets either boring or time consuming to edit the video and everything that goes into it.

  • @strasaphere how many times do you have to watch how to cut an onion, saute bacon, season with salt and pepper untill it's enough for you?

  • @strasaphere maybe he wanted to keep this video short

  • 'If you're drinking cooking sherry, you've hit bottom.' LOL! :-)

  • I finished off my cooking sherry and have started on the after-shave! Smoooooth!

  • yummmmmmmmm i want to try it out, too bad my cooking skills are too bad....I'll just fav this :D

  • AMAZING!!!!

  • hmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm hmmm hmm!

  • wat he said!

  • if there's booze right, can we use something else than sherry? something non alcoholic?

  • I believe there is denatured wine, for non-alcoholic types. You could just leave it out.

  • love, love, love this channel

  • what would you recommend as a substitute for bacon or wine ?

  • damn I wouldn't ever want to get rid of that stuff.

  • Seems wierd without ten minutes pluggin your phone for google.

  • That looks amazing...

Can you do beef stroganoff? Always wanted to make that at home. :)

  • Thanks Chef John. I've been looking for a recipe to use my leftover 'baby cow juice'. LOL. You always make me hungry and make me laugh.

  • man ,i'm sure hungry now

  • veal stock so good.

  • Beef & Booze = Brilliant!

    Thanks Chef John!

  • i love you chef

  • baby cow juice:)

  • yummy!!

  • my dad said look good and try that.

  • baby cow juice hah

  • Gotta try this weekend!!!!

  • mmmmmmmmmmmmmm

  • i love how you never waste the excess oils....ugh, they make me sooo hungryy!!

  • Do you think this would work with Oxtails?

  • @hughescrew Oxtails would not have the same amount of meat, as a short rib. You could brown them and make oxtail stew in a slow-cooker/crockpot.

  • Yes. Braising is the classic way of cooking ox tails. You will get more collagen, which will lead to a silkier sauce.

Try to buy meatier sections. The cooking time might be different. Red wine might be a better choice than sherry.

Really braising is braising and as long as you have a cut of meat suitable for it, it works.

  • soooo yummy !!!!!! :DD

  • John, this looks so good. I think I will make this my next cooking adventure.

  • my computer died but im lucky as hell that my ps3 can use the internet

  • Chef, what do you think of adding some tomato paste or ketchup in here for some acidity?

  • woow... that looks delicious!! Thx chef!
