Hmm, how do you continue cooking in the same pan without having the frond burn? Even when cooking on lower temperatures (and it never gives a good browning on meat when low) I always get some bitter burnt frond flavor. I've even tried using different pan types, ie, stainless, non-stick, cast iron.
Made these braised short ribs. @missfitt820 Iv'e always used nothing but Savory & James Cream Sherry for any recipes calling for Sherry in it.? & it really picks up the recipes flavors.? Just a quick tip.?
@ALEX165ALICKI Yes. Instead of flour, add some mini tapioca to thicken the sauce in the last 2 hours of cooking. But make sure to sear the meat and sautee (caramelize a little) the veggie in high heat before you put them in the crock pot. It adds so much flavor to the dish.

This is seared and stewed/poached, not braised. Looks great but braising uses only a small amount of liquid.

The problem with replacing the taste is that nothing else really replaces the taste or alcohol's reaction with flavor compounds.
With evaporating alcohol, the more water you have, the less you will cook out alcohol. And braising by its nature requires liquid.
I suppose that something like Chinese black vinegar or sherry vinegar (forgot) would enhance flavor. Won't be the same, but it will taste good.

Walmart has one for $45. It got a good review from Cook's Illustrated.
Target has one for $65, also reviewed well. I believe it is a Tramontina, who does good stuff.
These are about 6 quarts. Much cheaper than Le Creuset. Both are enameled.
Lodge has enameled, but the bottom curves up, leaving less surface area.
Mario Battali did well in their tests, but now you are looking at $100. Since it didn't do any better, I'd skip on that one.

@hughescrew Oxtails would not have the same amount of meat, as a short rib. You could brown them and make oxtail stew in a slow-cooker/crockpot.

Yes. Braising is the classic way of cooking ox tails. You will get more collagen, which will lead to a silkier sauce.
Try to buy meatier sections. The cooking time might be different. Red wine might be a better choice than sherry.
Really braising is braising and as long as you have a cut of meat suitable for it, it works.
