Wow that’s fast. Looks like he doing a good job. Some comments say he’s turning the blade into the on coming turn but he’s not. Click on my name to see a not so fast way to sharpen.
@theUnholySquire Which ones? The ones shown above and the ones referenced below are carbide coated paper wheels paired with buffing compound coated paper wheels on the other side. The carbide coated wheel is used to raise a burr or feather edge, the compound coated wheel is used to remove the burr and polish the edge, leaving a shaving sharp edge.
@Ub3rNo0ber There are a couple of vids that might show what you're asking about. I'll see if I can find them. The purpose of the carbide coated wheel is to raise a feather edge. No one who uses these claims the carbide produces the edge. The white wheel has buffing compound on it and removes this feather. The wheel is turning toward him, so he is stropping the edge and removing the burr/feather on the white wheel.
I have been building and selling these wheels for about 20 years. I do know what I am doing. Arguments on something such as this can go on endlessly. Some people will stilll argue that the earth is flat. You can see it is flat. Besides that, if it were round, we would fall off. Some people still argue that man never went to the moon. Those pictures were taken out in Arizona. If you are stupid, then this sharpener is dangerous. If you are stupid, then a table saw is dangerous.
You might be able to get it sharper, but not faster. If you were paying attention to the video, the wheels are turning toward him, not away. If he were turning the wheels into the edge, it would be tearing chunks out of the wheels and throwing the knife at him. You are right about one thing, in that you never strop into an edge, which he isn't doing.
If you had not turned the sharp part of the blade into the wheel, the knife would not have been thrown. I will never turn a knife sharpening machine away from me and toward my customer. BUT, I am also not going to be so stupid as to turn the sharp part of the blade up into the wheel. The wheel will naturally catch the sharp part of the blade every time you turn it into the wheel. That will throw the blade every time.
cont... However, the blunt contact alone broke three of my ribs. And this was from just the handle. If the tip were thrust into me at that force, I would probably have died. Please, be careful with grinders. I'm not trying to be a dick or anything, but you or a viewer could be severely injured or killed by sharpening as you do in this video. Protective eye glasses are a must and so is making sure that a grinder without it's shields is spinning AWAY from the operator.
Sorry, but that was the most dangerous demonstrations I've ever seen. With the wheels turning towards you like that, a small irregularity in a wheel could catch the knife and thrust it into your body. It you're unlucky enough to have the tip pointed towards you, the wound would almost certainly be lethal. I once forgot to turn around a grinder and had a 9" Bowie shot into my stomach. Fortunately, the blade wasn't facing me and so I avoided being stabbed.

@theUnholySquire One wheel is carbide. The other is slick.

@ritter89 The machine was not at fault. You were not paying attention to what you were doing.
