@caomeidi What's the point of this statement? It's kind of stupid. Taiwanese are still using traditional chinese characters even though China has already given up using them. I highly doubt that Taiwanese will abandon the Chinese culture.
We Americans have our own identity, but we are not giving our British roots completely.
Well. Food is a piece of art in itself, I remember dining at a taiwanese place in sydney's china town. I so want to visit taiwan some day, I love cooking asian food as well. Learning from the natives is the most inspiring:).
Wow! Great recipe show! I used to go to the Chinese Cultural Plaza in Honolulu, Hawaii and there're 2 Taiwanese noodles shops there! So cozy, so small, unpretentious, and the produce are from local farms! Watching your show brings me back. I'm not sure where your video originates, but your presentation is casual, down-to-earth, awesome!
i cooked this exact recipe. the shank was a bit tough so cut it thinner. the shanghai noodle sucked! it was really soggy. try using a noodle thats thicker.
Is there still a restaurant chain in Taiwan called "San Shang"? They specialized in Beef Noodle soup. I think they made it with star Anise and 5 spice....it was soo good!

One thing though. I cringed when you were cutting up your vegetables because your fingers tips were right by the blade! You should tuck your fingers in and let your knuckles guide the knife.

@caomeidi Native Taiwanese culture. Native Taiwanese had been living on the island long before Chinese immigrants moved there.

@laramis the clear liquid is beef bone broth. the sugar is called "rock candy" which is sugar crystals.

Lol! she said she's using about 500Kg of beef shank.;p That's half a ton for those of you who aren't into metric.
And as far as I'm concerned QQ refers mostly to noodles / pasta. It means al dante - has a biting texture.
