I'd probably try it. A heart is just a muscle: meat, like any old meat. As "organ meat" goes it hardly qualifies. I have to draw the line at things like balut or ortolan though, where you eat the whole bird -- lungs, intestines and all.

In the case of balut, brains and beaks too. With ortolan they sometimes at least cut the head off, but I've also heard of popping the whole bird in your mouth with nothing but the beak protruding, biting down and leaving only the beak on your plate.
