I lived in Italy for years. Hometown in the US and traveled over Europe for work. America has the best coffee for my preference. Italians oversimplfy. Europeans burn usually and Americans have everything across the board from shit Starbucks to your overpriced POS in NYC. @TheRecluse26 It's a language thing. We use the word express in English all the time. In France, and other places EXpresso is an equally correct variation. Ex- is actually the root of the espresso word, espresso comes from a Latin Ex- word. So, stop whining.:)

He's using a synesso Hydra. There is no "push to brew" button on one of them, only a lever when moved to the left engages pre-infusion (mains pressure brewing), then if moved even more, 9 bar pressure.
Regardless of how the brew mechanic works, it's a mixture of sight and smell that tells a good barista when to finish pulling the shot.

I've been to a coffee shop in Taiwan that allows you to choose the way to make your espresso shot. You can ask the barista to temp the coffee more or less, how much grinded coffee would you like. You even can choose to grind coffee finer or courser and make your perfect shot of espresso.
That´s because they don´t need to compete, they have the world´s greatest espresso. What you´re saying about Italy and espresso says a lot more about who you are than about coffee.

meh considering Illy makes pre ground coffee pods now, I wouldn't trust them all too well. They definitely tarnished their brand so they could market to convenience seekers than taste connoisseurs.
I know where you're coming from but if there's a market for coffee pods (which there is!) why not deliver? After all, not everyone is as passionate about espresso as yourself (which I think is great by the way!). 1. Coffee should de-gas for about a day before brewing.
2. There are multiple roasters in the USA that are more competent than any Italian/UK/etc.. roaster.
3. Coffee with cream and sugar tastes good. It's just not good in GOOD coffee. The sooner you come to peace with people using cream and sugar, the sooner people will start to like you a little.

1. Coffee should de-gas for about a day before brewing.
2. There are multiple roasters in the USA that are more competent than any Italian/UK/etc.. roaster.
3. Coffee with cream and sugar tastes good. It's just not good in GOOD coffee. The sooner you come to peace with people using cream and sugar, the sooner people will start to like you a little.
