Like Blitfast said, The image you showed of the dragon texture in peices is called UV unwrapping, basically you Unwrap your, in this case, dragon model then align it with the specific textures in a UV/Image editor. I dont know what 3d editing program you use but Blender is great and its free Blender.org.
You need to research UV mapping and UV unwrapping, that is how you texture objects with a texture such as the one you showed. While you are at it, you might want to research texture baking.
