He is leaning the wrong way because if he was leaning into the turns, that would sink the foil on the inside of the turn more, thus generating more lift. he leans out first to drop the inside foil and then leans in to make sure he doesn't fall off.

Cornering of simple foil boats has long been known to be a problem. It was why the Germans in WWII didn't develop the concept ( as well as the rough weather performance)
