I'm doing that for AC-less car this summer. 40QT cooler, some holes drilled in the sides, and some 120mm fans pushes in the lid, outputting air out the lid, being sucked through the little holes on the sides, and going through all the cold material before going out the top.
I made something like that out of a 5 gallon paint bucket and a 12v car fan. I used it in a diesel truck when idling was outlawed in some cities. You can get ice in the truck stops for a couple bucks and blow cold air into a "tent" under the trailer or in the bunk, or in the back of the roof airfoil if its an old cabover.
Instead of spending time on making a Ghetto AC, Why don't you both join a Gym.
