I prefer not to have buttercream under fondant - it is far too sweet and sickly - a double-dose of sugar. The fondant itself is icing. Also, best to work out the correct amount of fondant needed for the cake - there was a lot of wastage here. Otherwise, not bad - but best to smooth the sides first - at least twice, then the top and edges of the cake to prevent air bubbles, and a "rippled" effect. I know that applying fondant is new to America, so pretty good really.

You forgot to smooth of the top of the cake to prevent any air bubbles forming, I learn quite a lot of cake decorating stuff from my mum. we live in the UK and she owns a cake business called Evie's Cake Design :)
@BoricuaMamii621the buttercream should be very soft and easily spreadable. if it is stiff it will start pulling off crumbs from the cake and the coating will be all lumpy
My fondant was a minor disaster. Stuck to the counter. The big thing was that I needed more fondant. We had to roll it too thin to cover the cake. But, we basically made a fondant mummy, taking strips of fondant and putting it on the sides of the cake. There was ONE side that turned out OK. So that's the one we faced front. People thought the cake was beautiful! LOL Nowhere near as beautiful as yours, ggnoco, but thanks for the tutorial. I will keep trying!

@kgesq4 take any left over fondant, then you can just press it on a flat surface so its not all weird and bumpy, the just rub the flat side gently across the cake until its to a more desired smoothness.
@kgesq4 To be honest it looks like a simple plastic palette-knife, for smoothing putty on a wall. You could get one of them at your local hardware store.

@BloodyPorcelainx3 You can use any frosting you wish, butter cream, whipped, cream cheese, store bought cans. Just to allow the fondant something to stick to. @beauty101115 Great queston! If you have an odd shaped cake, or a soft cake....sometimes I will refrigerate for an hour or so after my crumb coat yes. Then apply icing and cover right away. You can freeze, however, I like to just cool enough to slightly stiffen so I still have a little wiggle room:) ~ Steph
@shfoodluver You do not have to, however, it does make it easier to smooth out imperfections in the cake. You can use store bought icing or even whipped. I have done 2 cakes before without any icing per customers request, I rolled it out a little thicker to help keep it looking smoother, worked fine. ~ STeph

I am suppose to bring the cake on friday but how long can the cake last covered with out it gettig messed up? would i be okay making it on a wedsday and brining for an occasion on friday afternooon?
@davidelij Yes, a fondant covered cake will stay fresh for 3 or 4 days, no problem, any longer than that refrigerate and take out put under a celing fan 3 hours before. It will sweat, but day perfect. If longer than 7 days you can seal in container or box and freeze, use same thawing process for 4 or 5 hours under celing fan to allow to dry. ive tried this and im only 12 and it turned out pretty good exept the bottom part of the cake collapsed so i had to make it again but otherwise it works pretty good

@1bad50 Well, It took me a little more than a day to learn, however, if you follow the directions on the box the cake part should turn out fine. As for making the fondant, you will need to let it site overnight before working with it, so I would recommend either buying it, which you can get at Michaels, AC Moore, or even Wal Mart. You could also do icing and smooth out for a nice look. Use Viva paper towels and dab to get a smooth look. Best of luck and nice guy making her a cake! ~ Steph

@sugar3and3spice Hey Sugar ~ I have never tried that, but I have tried many other things, marshmallow fondant will stick to just about anything. I usually use buttercream icing just to get it smooth. In some cases, like parts of a 3D cake I have applied sections with nothing. Best of luck ~ Steph

In a few days i'm going to be making my first tiered and first fondant cake, and i was wondering how many packets of cke mix should i use in a 6" tin, a 8" tin and a 20" tin? I want them all to be the same length. And also when rolling out the fondant do i have to use powdered sugar? Can i not just use flour or something similar? Thankyou!
@rubyN96 When making my cakes from box mix on the 6, 8, and 10 I would use 1, 2, and 3 boxes. This would give you about a 2 inch layer. You can cut them even. I then stack 3 layers with buttercream or filling between. As for your second question, you can use corn starch, not flour. You can use a mix of powdered sugar and corn starch. @youngbrezzy15 Hey Youngbrezzy, the buttercream serves 2 purposes. First, it smoothes out the imperfections of the cake like the layers, ect. Second, it acts like a glue to hold the fondant. @BEAUTY21up Hey Beauty, After making a batch of marshmallow fondant I wrap it in Seran Wrap, then put it in a plastic container to sit overnight or 2. When I am ready to use, I microwave for 20-30 seconds, then knead a LOT!!!LOT!!! until it's plyable. Then it should roll out just fine. The only time I have had trouble is when I tried to use right after making it without letting it sit overnight, or if I didn't knead enough. I hope this helps and please let me know:) ~ Steph

@jade9493 In my limited experience, marshmallow fondant was harder to work with than regular fondant. It ends up retaining shape more, much like a marshmallow it kind of springs back. If it's your first time I would recommend going with regular fondant. It gives you more wiggle room.

@LOPEZCHEER Hello Lopez. Fondant is very plyable and if you work the fondant with your smoothing tool you can get the creases out. I also find that if you knead a lot before rolling it out it works better. Take your time and do one crease at a time around the cake. It took me months of practice to get it right, If I can do it you can too! ~ Steph

@kapoopoof the best time to color the homemade fondant is to put it in little by little while you have it in your stand mixer n adding your powdered sugar

YES, Thank you for your question. After you make the BC fondant store overnight in sealed container...I use plastic wrap also. Then, when ready to use heat in Microwave 10-30 seconds depending on size (heat slightly) then KNEAD a lot, it will soften, roll out and apply. If you don't knead yes, it will crack. I would be too "chicken" to try that...LOL. However, to go that far you may consider using copper pipe and modeling chocolate. Fondant has it's limits, and this may be one. Try the modeling chocolate.
If you trim any parts that have icing on it and knead then place in a air tight container it will stay fresh for a week or so. To last even longer I wrap it in plastic wrap first. Great for decorations, ribbons, flowers, and balls.

What a great question! Yes & No. When I am doing a shaped cake, like a car, hat, purse, or carving, then yes, It must be frozen to get all of the angles. But for round tier cakes I usually do fresh the day before or day of delivery. But there is nothing wrong with freezing them, it's much easier. I just advertise fresh made - never frozen - for my standard cakes. The down side to freezing is that long freezes leaves a taste, so protect it with container. Thanks for this great question! Steph

hi, i was watching your video...its great,, and threw in some more pointer for me...but in some videos they say to freeze the cake before you put fondant on it? is this true?

@beauty101115 Great queston! If you have an odd shaped cake, or a soft cake....sometimes I will refrigerate for an hour or so after my crumb coat yes. Then apply icing and cover right away. You can freeze, however, I like to just cool enough to slightly stiffen so I still have a little wiggle room:) ~ Steph

@shfoodluver You do not have to, however, it does make it easier to smooth out imperfections in the cake. You can use store bought icing or even whipped. I have done 2 cakes before without any icing per customers request, I rolled it out a little thicker to help keep it looking smoother, worked fine. ~ STeph

Hey! thanks so much for this video! I am making a cake for the holidays and covering it with fondant. I am suppose to bring the cake on friday but how long can the cake last covered with out it gettig messed up? would i be okay making it on a wedsday and brining for an occasion on friday afternooon?

@davidelij Yes, a fondant covered cake will stay fresh for 3 or 4 days, no problem, any longer than that refrigerate and take out put under a celing fan 3 hours before. It will sweat, but day perfect. If longer than 7 days you can seal in container or box and freeze, use same thawing process for 4 or 5 hours under celing fan to allow to dry. How long does it take to make a fondant cale from beging to end using cake mix from a box? Im thinking of make my girlfriend one for her bithday wich is 1 day away do i have time?? @1bad50 Well, It took me a little more than a day to learn, however, if you follow the directions on the box the cake part should turn out fine. As for making the fondant, you will need to let it site overnight before working with it, so I would recommend either buying it, which you can get at Michaels, AC Moore, or even Wal Mart. You could also do icing and smooth out for a nice look. Use Viva paper towels and dab to get a smooth look. Best of luck and nice guy making her a cake! ~ Steph

@sugar3and3spice Hey Sugar ~ I have never tried that, but I have tried many other things, marshmallow fondant will stick to just about anything. I usually use buttercream icing just to get it smooth. In some cases, like parts of a 3D cake I have applied sections with nothing. Best of luck ~ Steph

In a few days i'm going to be making my first tiered and first fondant cake, and i was wondering how many packets of cke mix should i use in a 6" tin, a 8" tin and a 20" tin? I want them all to be the same length. And also when rolling out the fondant do i have to use powdered sugar? Can i not just use flour or something similar? Thankyou!

@rubyN96 When making my cakes from box mix on the 6, 8, and 10 I would use 1, 2, and 3 boxes. This would give you about a 2 inch layer. You can cut them even. I then stack 3 layers with buttercream or filling between. As for your second question, you can use corn starch, not flour. You can use a mix of powdered sugar and corn starch. @youngbrezzy15 Hey Youngbrezzy, the buttercream serves 2 purposes. First, it smoothes out the imperfections of the cake like the layers, ect. Second, it acts like a glue to hold the fondant. However, I have never tried it without buttercream. I have tried in using whipped icing and it worked fine. You have me curoius now ~ Steph

@BEAUTY21up Hey Beauty, After making a batch of marshmallow fondant I wrap it in Seran Wrap, then put it in a plastic container to sit overnight or 2. When I am ready to use, I microwave for 20-30 seconds, then knead a LOT!!!LOT!!! until it's plyable. Then it should roll out just fine. The only time I have had trouble is when I tried to use right after making it without letting it sit overnight, or if I didn't knead enough. I hope this helps and please let me know:) ~ Steph

@jade9493 In my limited experience, marshmallow fondant was harder to work with than regular fondant. It ends up retaining shape more, much like a marshmallow it kind of springs back. If it's your first time I would recommend going with regular fondant. It gives you more wiggle room.

@LOPEZCHEER Hello Lopez. Fondant is very plyable and if you work the fondant with your smoothing tool you can get the creases out. I also find that if you knead a lot before rolling it out it works better. Take your time and do one crease at a time around the cake. some say use powered sugar others say corn starch what is the difference? Mine always ends up cracking no matter what and i use satin ice and i cover my area with powered sugar.Any reason why this always keep happening to me.you should do one more detain how to keep the wrinkle out a up close for dummies like me who always get that last wrinkle

Rolled Fondant

YES, Thank you for your question. After you make the BC fondant store overnight in sealed container...I use plastic wrap also. Then, when ready to use heat in Microwave 10-30 seconds depending on size (heat slightly) then KNEAD a lot, it will soften, roll out and apply. If you don't knead yes, it will crack. I would be too "chicken" to try that...LOL. However, to go that far you may consider using copper pipe and modeling chocolate. Fondant has it's limits, and this may be one. Try the modeling chocolate.

If you trim any parts that have icing on it and knead then place in a air tight container it will stay fresh for a week or so. To last even longer I wrap it in plastic wrap first. Great for decorations, ribbons, flowers, and balls.

What a great question! Yes & No. When I am doing a shaped cake, like a car, hat, purse, or carving, then yes, It must be frozen to get all of the angles. But for round tier cakes I usually do fresh the day before or day of delivery. But there is nothing wrong with freezing them, it's much easier. I just advertise fresh made - never frozen - for my standard cakes. The down side to freezing is that long freezes leaves a taste, so protect it with container. Thanks for this great question! Steph
