It's pretty common in racing to keep both hands ont he wheel except when shifting. There is no power steering and the G-forces your body is under make it next to impossible to turn the car with one hand.

He isn't the fastest racer out there. But he was the SCCA Midwest Series champion in 2007. I wouldn't call him a noob.
