A real console controller will be far easier to learn than software. The sliders and buttons are exactly what you need. A mouse or whatever just isn't the same.
@pastorkris100 i've alway's liked Daslight, it's pretty basic, but has a veeery steep learning curve... i'm fond of Martin Products mind you... a lot harder to get used to but has much more features possible..
Would the led color strip be a good option to light a band or person speaking at church? Can it generate a bright enough light if I use one or 2 on the stage floor? (15-20 ft wide area)
One single color strip? Definitely not. If you were to have 3 or more (with 3 being VERY minimal) thn youd incrse yur brghtnes & visibility of the performer on stage. Honestly now, when it comes to LEDs, you just dont want them on people who are lecturing, preaching, talking. LEDs have a very crappy color temperature which, in short, makes things & people look cold, discolored, & often times just plain weird Go for a PAR can or two. And if youre really feeling adventurous, go out & buy a Leko!:)

What software should I buy?
What software is a balance of easy to learn and use verses the cool features?
We have 24 standard par 64 cans and 10 LED fixtures with 10 dipswitches on each fixture.
We were using an NSI board for the cans but need to update and go to software because of the amount of fixture addresses now needed for the LEDs.
I have the cans addressed already but want to add the LEDs to wash the back wall scrim with rotating color.
