Got me a piece of that same stupid dead cow named Chuck and put it together today. I did let it go a good 3 hours, and another half hour or so with the taters and carrots. Just finished eating about a pound of the sucker, and it feels damn good. I do love the extra flavor the spices give it, WAY beyond any old fashioned "Gramma's pot roast," and when you bite into one of those little garlic pockets, it really lights up.
When am I gonna learn to NOT watch these at 2:30 AM? Jeez, now I'm starving. And I love how that roast went together. That Angus was named Chuck, wasn't he? About a 6 pounder?

Cuts & Moose simmer the meat for at least 3 hours, the longer you simmer the more tender it gets. Add carrots & tators, simmer till they get tender.
This can be finished in a slow cooker after searing & deglazing on the stove top.
There are Restaurants down here that simmer this dish for 16 hours or more. The meat just falls to pieces & is sold as a Debries Poboy
