Are you smoking or grilling the hen. If I were to smoke low and slow do I need to remove the backbone? I plan on cooking 20 or so on fathers day and I need some info. I am going to do a jerk wet rub that should be great what do you think? Thanks for any info you might be able to give me.
ajw1976Horn, sorry I left a few things out. In the WSM, you're using some fuel to first get the water pan to the desired temp then for the smoker as a whole to get to that temp. With the BDS, it's just getting the grill to temp and laying the food down. The music was done in Apple's Logic Studio.
ajw1976horn, I totally understand your thought process, in fact we thought the same way until we purchased the BDS. The main thing is, the BDS does not need the water pan to control temps so you have that direct, over the fire taste that the WSM cannot provide due to the water pan being in the way.
Nice video bro. I currently own a WSM and have been eyeing a BDS for a few years. I can't justify the cost for something that is so similar to what I already own. Besides, most of my cooks are grilled chicken, steaks, and burgers. Kinda overkill for just grilling items for a family of four. Anyway, thanks for putting up the video.
