How do you do the sequences? Do you do it on the piano or do you create them on the computer behind you and then transfer over to the piano? I have a Technics organ and I know it can let me create sequences but it seems so hard!

Prefer to do the sequencing on the keyboard.

When you've done it a few years it becomes easier. When I started, the first sequence took me over 2 weeks. Now I can do it in 20 -30 min. depending on the song and complexity.

Some are done in step time & some are in real time.

The tops. That is an eleven. As you mention, slow start, cranked it up at 45 secs., at 2:25 much better, 3:10 moving on now, 3:35 starting punishing the keys, and an excellent ending. I like it! Had to replay it immediately.
