I liked the tutorial, however there was one thing I was taught in catering college that you didn't demonstrate and that was was to remove the tendons from the legs. Still very good demo, though
@DefaultSlow I use high carbon stainless steel because they're easy to sharpen and hold their edge. Henkels, Wustof and Dexter-Russell are some that I like to use. Good luck! Victorinox is also good.

If you're say Southern frying it, it's better to take the skin off otherwise you'll just get loads of fat and because the skin is very loose once cooked it takes all the breadcrumbs off with it, however if you were grilling or frying the chicken it's best to keep the skin on because you have that layer of fat which protects the meat and stops it drying out. Hope this helps.

However, I am fully confident I can have good results the next time I do this thanks to you. Well... getting a little better chefs knife wouldn't hurt.

I am not trying to show off how fast I can cut up a chicken. It's more of a tutorial. When you separate the joints you are less likely to chip off some bone which could end up on the plate.
I personally just prefer to buy my chicket from a local butchers where the all the bones of the chicken has already been removed apart from the wings and legs, flattened and in a marinating bags for the same price as buying your own bird. Very handy.
