    thanks Jason

  • @wildshotsintheair Thanks! Glad you enjoyed it! Cheers, Jason

  • I liked the tutorial, however there was one thing I was taught in catering college that you didn't demonstrate and that was was to remove the tendons from the legs. Still very good demo, though

  • Hey Chef, im 15years old wanna be chef works as a chef 1 day at week.

Laerned alot from my work and you.

But i buy a Knife set whitout knifes, got any knife tips? (plz in wood)

    Maybe Victornox?

  • @DefaultSlow I use high carbon stainless steel because they're easy to sharpen and hold their edge. Henkels, Wustof and Dexter-Russell are some that I like to use. Good luck! Victorinox is also good.

  • "dont worry.. he's not feeling it, he's dead"

LOL.. chef jayson pls do some stand up comedy =)

  • @gerald22macoolit

Haha! Thanks, but I don't think I could that... =]

  • @ChefTips Hey Chef! I been wondering. Is a wise idea to leave the skin of the cut chicken?

  • @UrmrslowguyROBLOX It depends what you're doing. If you're say Southern frying it, it's better to take the skin off otherwise you'll just get loads of fat and because the skin is very loose once cooked it takes all the breadcrumbs off with it, however if you were grilling or frying the chicken it's best to keep the skin on because you have that layer of fat which protects the meat and stops it drying out. Hope this helps.

  • Thanks so much for the tutorial~ I've been putting of recipes that call for a chicken cut into pieces - now I feel brave enough to attempt it! :)

    - Jen

  • @Kueronez

You're welcome. Thanks for the comment.

I am going to be doing another recipe calling for cut up chicken real soon.

  • nice vid. Thanks for this tutorial!

  • @MrTubrog You're welcome! Thanks for the kind comment. Jason

  • what does veronica do ? anything in the kitchen?

  • @82skiz The dishes!

  • that's a king size chicken. i've never seen such a big chicken before.

  • Thanks for this video! I plan to get some whole chickens today to cut up myself. I'll also be able to make my own chicken stock out of them too, woot! :D

  • I find you can save so much money by cutting the chicken myself than

getting it already cut up. At least I know I have the same chicken parts!

    thanks for the instruction

  • @9aspengold5

    Ha ha!

As always, thanks for your comments Marcia!

  • If you want to see it done fast, search Youtube for Martin Yan.

I think the slow version is a lot easier to follow ;)

  • There is a small fat line that helps you find the joint between drum stick and thigh.

  • @ThomasBaluWalter

    Thanks for sharing that! =]

  • As I indicated in my last comment... I have watched many videos on cutting poultry... but I am presently feeling that this is the best I have watched. It almost seems like others like to show off how quickly they do it... even those with the best intentions just seem to leave me the viewer unsure what to do when I try. However, I am fully confident I can have good results the next time I do this thanks to you. Well... getting a little better chefs knife wouldn't hurt.

  • So, I asked myself "self... why would I want to watch another video on cutting up a chicken?"

Then I answered myself "self... why would you not when it is Chef Jason HIll doing the instruction? He is always fast, friendly, and very informative."

To which I could not agure and proceeded to click on the video to play it.

I have to remember to thank myself... I was right. :-)

  • lol, it would be funny if when he says "He's dead" the chicken would scream!

  • I like your watch :)

This video was very helpful. I really need to improve my cutting/carving skills. Thanks.

  • @ChefTips and @CaliforniaTravelTips I've been cutting chickens for years and have NEVER ended up with a bone in the plate. And if you work in a professional kitchen speed is a necessity!

  • @antintyty No kidding. But speed is not going to help anyone during a tutorial.

  • uh, why are you referring to the chicken as "he" and "guy"? last time i checked, they weren't selling roosters at the grocery store...

  • @bettythebutcher

    Of course it's a hen/female.

We just always referred to them as he or guys in the kitchens...

  • Chef Jason, please don't listed to those idiots, my gosh apparently some people do not connect their brains with their thongs

    I looove ur vids!!! :D

  • FYI, this took WAY to long to cut this chicken up!! I can do this in the amount of time he used breaking the legs on the chicken!!

  • @antintyty

Great! You should make a video and show us.

I am not trying to show off how fast I can cut up a chicken. It's more of a tutorial. When you separate the joints you are less likely to chip off some bone which could end up on the plate.

  • @antintyty What a lame comment. Like this is a speed contest. The point is to show people a step-by-step method.

  • @antintyty do you ever think its a tutorial so it's supposed to be slow. You complete tool.

  • what you do in this video is why I will never end up a chef =)

  • LOL, "We already broke his legs, now lets break his arms." Did the mafia hire you to do this episode? That chicken must have owed them some money.

    Nice tutorial.

  • natural bor killer XD nice work chef :)

  • Thanks! I've always been too intimidated to cut up my own chicken, but you made it so easy. =]]

  • "Don't worry he doesn't feel it he is dead" NICE, thx for this tip, its great, i hope you had great meal :)

  • Brutal XD

  • bankner just make this whole video more interesting!

  • great video! Look forward to many more.

  • easy

  • Very helpful. Thank you.

  • for your next video: fry that chicken please! :D

  • I personally just prefer to buy my chicket from a local butchers where the all the bones of the chicken has already been removed apart from the wings and legs, flattened and in a marinating bags for the same price as buying your own bird. Very handy.

  • why does the chicken(breast parts) i cook on the stovetop comes out tough i mean hard not tasty?? am i over cooking? thats why i never cook it anymore. i buy it ready to go rotissere chicken. any tips? thanks for the tutorial:))

  • lol that impression hahahahaa

  • I noticed there was a little bit of meat left. What do you do with the excess meat, like along the backbone?

  • The voice of the mobster was funny.

  • LOL Don't worry he won't feel it he's dead. LOL

  • keep up the vids, they are great..

  • Wow, Jason that was the slowest cut job ever! I would have processed 3 chickens in that much time, You must not have a real job in a kitchen!

    Chef Brian

    chefbrianscookingtips

  • @bankner

Ha ha! This is a tutorial video, not a show off video.

  • @ChefTips That is a very good answer, thumbs up!

  • @bankner i give you thumb up for trolling on a tutorial video!!

    keep on trolling Chef Brian!!

  • @bankner Maybe you should "put your money where your mouth is". Maybe put a video or two up! : ]

  • @bankner i didnt see ur cut chicken video.......in fact u have no videos on ur channel.NICE JOB CHEF JASON.

  • @bankner

Trollin ass. You prolly woulda cut off your finger and ran home cryin to mommy.

  • @bankner you're such a jackass

  • @bankner Bankner you must be semi-retarded. He wasnt saying he could cut a chicken up faster than anyone else. He was showing his viewers how to cut a chicken up one way. To do this he showed every step in detail. Before you post a dumbass response like the one you did maybe you should look for the intent behind the video.

  • @bankner do it then...

  • Great Video Jason!! I wanted 2 give you some money love but you did not have an ad on this video!

    Thumbs Up my Friend!!

  • Did this chicken owe you money? First you break its legs then its arms?! That is a nice informative video though.

  • @FeiFongWong1 lol

  • does it work the same way for duck?

  • @200505442

    Yes.

  • @ChefTips what about a pigeon?

  • Thanks for posting this I've been wondering how to do this for awhile.. now i just have to sharpen my knives lol

  • Thanks! You cut it different than me, but boy, your methods works.
