The cookie sheet is plenty dark enough from years of use, I can assure you, it cooks things pretty good. Several of my cookies sheets are black from when I bought them. I can use black ones, but capping it over it, and then the reflector being aimed directly on the cookie sheet heats it up really nice. I keep my reflectors adjust properly to do the job. many fail to keep the reflector adjusted right.
I have a question , when i cook my pizza in my oven ,it usually fogs up my window , any way of stopping that from happening ? oohh and i'll even leave a tip ,put bricks in your oven and it will help to keep the heat up when a cloud or two passes over.
I cook my dough first and cover it with another cookie sheet, this helps knock down the steam. you can just ever so slightly, raise the lid of your oven just barely enough to let air circulate inside without losing much heat. or just wipe the window off when it gets too steamed. I never have much problems with that in my ovens. If you see my other vids, I do discuss heat retention using tiles or brick. they do help alot in keeping the temps steady.
I would have to see it before I could help. One key point is keeping it air tight at the top so heat doesn't keep leaking out. Another thing, is what is the interior like?

LOL, I do too! All I have right now is a still camera that has video and it only allows 60 seconds at a time. I found I have another camera that will take longer vids, but the quality is lousy. If I come across a good video camera on the cheap, I definitely will use it!
Nah, the videos are the right length - as far as I can tell, the average u-tube viewer has an attention span of about sixty seconds anyway ;-) Too much longer and they'll start getting confused and their hands will automatically start twitching for a remote control.
Why isn't the cookie sheet painted black? Is that too keep it from getting too hot on top?
