@asmahjuri I would make sure and use it the same day. Baking is all chemistry and you don't want the chemistry to change too much before you want to use it. I would put it under a damp tea towel in the fridge until you're ready to use it. - Brandi
@Reddsmorris1 I think you could do the dough base WITHOUT the butter and keep it for a day or so, but I wouldn't push it. This dough is kind of picky and should be made and used sooner rather than later. But, if you make the dough, keep it wrapped in plastic wrap in the fridge and use it within three days.
Zhaquiri, you should be able to use the puff pastry for anything you want! Keep in mind, it really does PUFF up. You can fill them and freeze them for later use. If you're going to do a turn-over, make sure you cook your filling first, or your apples may still be too firm.

Thanks for this recipe! Simple, easy to follow, and not unnecessarily complicated. Can this be used to make (1) pizza pockets? How about (2) McDonald's-style apple pies? If I can use this for pizza pockets, (3) can I fill them, close them up, freeze them (uncooked), and only take/bake the number of pockets I want? How long do you think they'll keep?
I'm planning on making a batch of pizza pockets and keep them in the freezer, ready-to-bake. For quick, freshly-baked snacks and stuff.
jaqsro, if you can't find pastry flour, just do 2/3 all purpose flour and 1/3 part cake flour. If you can't find cake flour, just use a good quality all purpose flour. Let me know how it works out for you! - Brandi

You only need to let it rest about 10-15 minutes. It allows the gluten in the dough to relax so it's easier to stretch and fold over all that butter.
