I'm a big Bruce lee fan, I studied martial arts for years as a kid but found out what real fighting was in the cage. Lee was a great athelete but he'd loose bad to MMA fighters today. If he trained in MMA he'd probably do okay, but who knows if he could even take a punch.

He fought in amateur here and there and was never a professional fighter.
135 pounds, 5'6 not even in the lightweight class and would be murdered if he could make weight.

Bruce DID include grappling in his training.
He trained with some of the top grapplers of the time, most notably Gene Lebell.
He knew bits of wrestling, judo and jujitsu.
The thing is, grappling has evolved since then.
But like you say, Bruce wouldve evolved too.

actually bruce leeboxed for a while and beat a three time boxing champion. he also was a master of wing chun and praticed regular jijitsu
he even said the best fighter was one who knew many styles
im pretty sure today he would have learned some bjj, wrestling, and grappling
