Great Video! I can still taste that tender juicy pork and I'm going nuts to have it again 11 years later. I'm thinking about starting an Annual Pig Roast myself. But I have a question... What size pig would it take for 30- 40 people?

It's not true what you say that when we stop eating meat that there wolrd would be overpopulated with animals. About 95% of the animals are farm raised. Animals are being bred to increase their population at an animal farm to be eaten. We we just stop eating meat, then no uneccesarily animals have to be bred. We don't eat lions, or alligators as 95% of the meat Americans eat are from farm industry, not from the wild.

That is one slick cooker you have,..... I have always done them on a spit but i think I may try to build one similar to yours. It looks like an excellent job but definatley takes alot longer. On my cooker I can cook about 100 lbs of hog in about give or take 5hrs
A mop sauce is a combination of apple cider vinegar and water. It flavors the meat and keeps it from drying out. Apple is a popular flavor for pork...when you smoke ribs you want to "mop" the vinegar/water "sauce" over the meat. When doing a pig you want to inject the meat with the mop sauce and then leave it alone.
Yep...call around to party rental places and see if they know of a private individual who has one to rent. Also, I will call caterers who specialize in BBQ. That is how I started...I rented one, fell in love with it and just had to build one! Now it is stored in my garage and my cars are in the driveway! Good Luck!

lame..please explain the fuel type; the amount and time that the fuel was added...etc...give us some information on HOW to keep the temp steady and the type of rig you have; not just the time required
Everyone is entitled to their opinion but I guarantee that it did not taste lame. To answer your question, I used hickory wood as my main source of fuel. I kept the temp low (250 degrees) so that it creates more smoke. Every hour I would check the fire to see if I need to add more wood. All together I used around 20 logs and 20lbs of charcoal. My rig is homemade. I used a 550 gallon oil tank that was left out in the elements to cure for about 6 months. Hope that helps...
The prep time for a hog is pretty simple. Some BBQ'ers just rub peanut oil on the skin and just use the smoke for flavor. I did rub some canola oil on his skin and used a mixure of rubs that you can find on the market. You can google "bbq rubs" and finds recipes or combine some of your favorites. Mine is KC Masterpiece BBQ seasoning. As for sauce...I make my own which is a thick sweet "Kansas City" style sauce. Good luck with your hog...
I called around to meat processing places and they had a guy who orders whole hogs. The price depends upon the price per pound for the pig. It ranges from around $1.35 - $1.50 per pound. This pig in the video was 142 lbs. I shot this video in Jeffersonville, Indiana.
My brother in law and converted a 550 gallon oil tank into a BBQ smoker/grill. These tanks are hard to find...check out rural area junk yards and you might come across one. I found an double axel trailer that I mounted the tank onto and welded together the grates out of rebar and diamond mesh. It hold the heat really well and has over 4,200 sq inches of cooking space! You can go online and buy one for around $4,000 and up but it was much cheaper doing it myself.
One thing that should be mentioned here is that if you do find an old drum or tank make sure that there hasn't been a chemical in there that could poison you. If you do want to do it yourself, I would suggest you find a supplier of new tanks (not hard to find). BTW, great vid bbqologist. Now my mouth is watering!
