@rubenvolckaert I learned the recipe while in Belgium. All I could get this far away was Duvel (although a dark Canadian beer works). The chef I worked with said 'go for it', it will be great (and it was/ is). I try to be authentic as possible in most recipes as some folks would make just stew and pour beer in it and then call it Belgium Beef stew. Much like many do with adding red wine and then calling it Boeuf Bourguignon (Julia Child messed that one up for everyone). thank you and cheers! KtC
@DEC0042 Stewing beef is from the chuck however, round or even sirloin can be used. Use a bit of olive oil instead of the bacon. The idea is to seer the beef a bit first. Bacon although not for everyone works well as it also infuses the beef with some nice flavours. You can refer to my "Cuts of Beef' vid. for the various cuts. cheers, KtC
lol I appreciate the comment. We are actually fairly busy most days like most folks (although I try to cook instead of the fast-food). About once or twice a week we try a favourite or something new. If it works well (or yet to be posted) I produce a vid. I actually try to prepare meals here that are not too expensive but there are exceptions. This one is really the cost of stewing beef and a bottle of beer. About ten bucks total for food for four. Good point. cheers! KtC
European food is wholesome in most parts. Lots of veggies, wine and meat prepared mouth-watering. This is a real good one and by all means skip the bacon fat (olive oil works fine). As mentioned below know as 'Carbonade Flamande'. cheers boss! KtC
This is called Carbonade FLamande and the suace is mainly made from sweeter dark beers. I ate this few times when I was in Belgium.Good food and excellent for harsh winter.
yes, very correct on all counts. I could not get a dark beer from Belgium (sold out) so I went with the lighter brew. Still works nicely though. I had it too several times over there. My favourite! thanks for sharing, KtC
yes certainly, it used often in many parts of teh world. Some say beer is food. Variable beers go better with certain foods. Beer is full of nutrients. The carbonation and enzymes found in beer are great for a marinade or simmering stews. A lot of internet sites on beer and food (cooking and pairing). Please try once :)
This is not the traditional belgian beer beef... but close enough :)
Get some dark beer in there man, Duvel is just not suited for stew

Is bacon fat necessary in this recipe? Can I use butter or another fat to substitute for it?
Also, what are you referring to when you say 'stewing beef'?

@kooktocook KtC, do you know any tomato alternatives, as my dad is allergic and he wants to make this, thanks Idk.
IdkScapeFilms 2 years ago
The meal is beef primary. The tomato adds a bit of nutrients and texture. Nonetheless, just leave it out. It will turn out fine! cheers! KtC
