First of all the meat must be half lean beef and half lamb rib meat, otherwise it will be too dry and gets tough after cooking. As for the method of cooking, it must be cooked over charcoal fire, oven is not hot enough and dries the meat without getting the fat out.
The maximum temperature of the Home Ovens is 300 Celsius, but charcoal heat can get over 1000 degree. Let us put it this way, charcoal fire is used to melt metals!
I watched your video yesterday and made the kebabs in the evening. They came out great. Thank you for the impeccable guide. I did not have any skewers but was able to roll the meat and placed it on an oven tray. The fat separated and i was left with good tasty kebabs. I used gram flour instead and added ginger garlic. YEY! Thanks again.
Ingredients and amounts for making this type of kebab:
To prepare a batch of Iraqi kebab enough for making six sandwiches, mix one pound of meat (traditionally a mixture of beef and fatty lamb) with one small grated onion, ¼ cup of flour or breadcrumbs, 1 teaspoon of salt, and ½ teaspoon of black pepper (optional: ¼ cup finely chopped parsley, and ¼ teaspoon each of allspice, ginger, and chili pepper, all ground)
I spend hours protesting Islam and the tribal Arab cultural mindset every day all over the internet but for FUCKS SAKE, leave this woman alone. She's making food (and good food at that). She's sweet and generous to have posted this. Not everything about Arab/Persian culture is bad. There's no need for Islam but I can say that about pretty much every other religion too (although the degree varies).
Some of you idiots need to learn to separate the people from the stereotype.

M1... by the way one of my best friend is Persian, so I don't have anything against Iran. (i can eat up to 10 pieces with hummus dip! yes it's an excuse to binge)
the lesson of kebab telling us that if we see things from a slightly different perspective there will be harmony.
yes the 'third person' surely wins without our notice. we became like this because we used to be united once but then every part has been divided and ruled independently. that is how the dispute and fight begin when people unnecessarily argue over some differences in culture.
We really need some excellent leader that gets along with every belief and ethnicity. Who can bring us all together, lets face it the people can't do this on their own. We seek differences to fight, not to learn from it.
The only problem is that when a good leader would show up, he would be executed by hidden forces that does not want a unified Iraq. Because when we are so busy fighting the "Third" person is stealing our oil and dignity under our nose.
Yeah and 911 is just an excuse to attack and steal oil from Iraq, i believe the US government has precisely calculated the return profit of oil that is worth much more than the twin buildings and innocent lives. surely these are meaningless compared to the luring profit of the world largest oil reserve.
besides, painting a bad name on Islam also gives an extra bonus to the Zionist and US who wish to see the segregation of Muslims. this suggests why Israel has set up a remote military base in Singapore in order to monitor and watch over the neighbor countries where majority is Islam. sadly, our situation here never been better though...
Malaysia and Indonesia are currently fighting over who is the 'rightful founder' of a cultural dance. stupid isn't it?
M1... this is one reason why our countries will be raped by either usa(Iraq) or the mullas(Iran). One culture is not better then the other. Because people like me and you, our countries will never be liberated and evolved.
We are fighting over a fucking kebab/kebob. No wonder our countries fought for 8 years. And if we continue like this we will fight for 88 more years.
@kittleboy Should I call you thieves for adopting the Cuneiform writing of ancient Iraq? Should I call you thieves for adopting the ancient arts of Mesopotamia or Iraq?
And this is about food, I can't believe how impossibly backwards we, the people of the Near East, have became.
@kittleboy Are you seriously comparing cars to kabobs?
Fine, next time we Iraqis want to eat something, we'll go and learn aliens' food and I'm sure they wouldn't care because they're far ahead of your mentality.
@kittleboy away from political issues, culturally Iraqis & Iranians have many things in common. I visited Iran many times & i tasted their Kebab but it is different from Iraqi Kebab coz each nation has its own mood.
and shia and sunni dont hate eachother, please dont fall for the wests mind trick of trying to divide everyone. i have never encountered a shia person in my life who hated me because i am sunni, and vice versa. the only shia and sunnis i find that are the most divided are the ones from india, pakistan, afghanistan. those people have no sense of unity and would be hating each other regardless of what religion they follow. arabs are very nice people in general, the best in fact :D
read the book called "the arab" written in the 50's by a british lord. he describes the arab race very well. we are a "sister people" of the white race (most white races there are different types) because arabs and semites in general are among the most decent hearted people in the world.
@issareign pssssst its IRAQI food and the arabs are from Saudi arabia dumbasses jeezzz fucking Arabian communtity in Saudi arabia brainwashed lot of people from Syria,Jordan,IRAQ,Lebanon, they are not arabs in our blood and their blood jeezzz
Sunni or Shia God will decide when the time will come. let's put the fight aside and vote for peace. remember this is FOOD & RECIPE not POLITICS & RELIGION!!!
you muslim sunni and sheaa, you are driving every body to the same argument: even in food you put your differnces, what happend to you? can you leave you religion aside, and live one moment in peace like the rest of the world dose
howitzer...this video is about food. stop bringing your religion into this. I bet you are not even religious, we know iranians are fake.
salman...the way you word your sentences don't make sense.
how do you come up with the idea that she is a kurd??? LOL
my mom, aunts, cousins, Iraqi friends all have the same accent and we are not kurds. like I said, iranians are fucked up with their sectarian ways. look at you starting drama over kabob. pathetic.

I'm sorry for the owner or who put this subject,I beleive this is an iranian food and definitely is not Iraqiiiiii,Iraqi people want to be iranian but it can not happen with stealing our culture and tradition.
First of all, BELIEVING does not make it a FACT!!! But for you guys in iran maybe just the belief of something is enough instead of doing some research.
Second, trust me when I say this but no Iraqi with a shrimps of sanity would want to be an iranian.
Third, with a great history of our own we are not in need to steal someone elses tradition especially not from a culture where the guys dance like women.
Just for explanation: I suposed this lady is not Iraqi, she is an Iraqi-Kurdish lady, because of her accent.
Some of (not all of) kurdish people declares that they are more Iranian than Iraqi.
Second you cannot compare your culture and antiquity with my country as you were part of (very small part) Iran and your country is independent near 75 years from United kingdom.
You sholud know this,do you?
they dance like women but they dress like men not like your men dressing
so what if she is a shiite. You talk about that she is influenced by iranians like if she invented the kebab with that influence???
Do you actually read what you write, because it doesn't seem that way? It seems more like a cheep shot.
F.Y.I.... Shiite is not a culture its a sect thus the comparing of food between sunnis and shias should be based up on the religious restriction on food. For ex. sunnis from other cultures have different food because of culture not because of sect.
This comment has received too many negative votesshow
geeeeeeeeessssssssss who gives the damn, I don't care as long as I go to Iranian restaurant, eat Iranian food, which I love the best ,I don't care where it comes from or who makes it first. I see it Iranian food .PERIOD. bye the way nice guess, I'm in research but not food.
You say who gives a damn where it comes from, nobody gives a dame UNTIL people like you come with dumb ass accusations and statements without a thought or two of how stupid they would look.
When you said "sorry this is iranian food" it sounded like you had some shit to back it up. But some iranian restaurant serving it in Houston or that you see it as iranian food is not what I call, PROOF. Its more like a cheep shot if you ask me or anyone with a sense of logic.
just chill dude, but i must say that Iran has much more history and culture than iraq and if you want i can list many reasons why iran is a far superior country than iraq will ever be. TRY ME
i must say Iranian gays are quite tempting and good-looking but too bad homosexuality is not tolerated in your country isn't it?
why don't you guys stop fighting? you see, there are plenty of Iraqi and Iranian restaurants in my country (Malaysia) and we welcome both of them with arms wide opened. i don't want to see people bring this kinda conflict into our country.
M1... I cant believe that we are having this shitty conversation about some stupid kebabs. I don't have hate in my body, I only hate it when people like Howitzer drag everything in to sectarianism.
Instead of giving me a lecture on how Iran is better then Iraq you could start with giving me a fucking list of how we could collaborate to bring justice and democracy in to these both countries I'm not saying Iraq's situation is perfect, and in the eyes of everybody their culture and country is best
This is like Iranian Kabbab, what is the difference?

yes the 'third person' surely wins without our notice. we became like this because we used to be united once but then every part has been divided and ruled independently. that is how the dispute and fight begin when people unnecessarily argue over some differences in culture.
Berrymore84 2 years ago
@Berrymore84
Atilla3 2 years ago
@Atilla3
Yeah and 911 is just an excuse to attack and steal oil from Iraq, i believe the US government has precisely calculated the return profit of oil that is worth much more than the twin buildings and innocent lives. surely these are meaningless compared to the luring profit of the world largest oil reserve.
omg i'm off topic

@Atilla3
besides, painting a bad name on Islam also gives an extra bonus to the Zionist and US who wish to see the segregation of Muslims. this suggests why Israel has set up a remote military base in Singapore in order to monitor and watch over the neighbor countries where majority is Islam. sadly, our situation here never been better though...
Malaysia and Indonesia are currently fighting over who is the 'rightful founder' of a cultural dance. stupid isn't it?
Berrymore84 2 years ago
M1... We seek our differences to fight each other while EU seeks other countries(only Christian) to complement their own deficiencies.
We are the Middle east it does not matter if your sunni, shia, christian or if your persian, turk, arab, or kurd.
Lets not destroy each other. This is really what Islam, Science, Nationalism etc... wants.
Atilla3 2 years ago
M1... this is one reason why our countries will be raped by either usa(Iraq) or the mullas(Iran). One culture is not better then the other. Because people like me and you, our countries will never be liberated and evolved.
We are fighting over a fucking kebab/kebob. No wonder our countries fought for 8 years. And if we continue like this we will fight for 88 more years.

Never mind him, my friend.
We've been neighbors since the dawn of time; neither Saddam nor kabab will make us hate each other.
Greetings from Iraq, the land of Mesopotamia, to Iran, the land of Persia.

Yes, Exactly, you are absolutely right
BUT
this is Iranian kebab
kittleboy 1 year ago
@kittleboy Should I call you thieves for adopting the Cuneiform writing of ancient Iraq? Should I call you thieves for adopting the ancient arts of Mesopotamia or Iraq?
And this is about food, I can't believe how impossibly backwards we, the people of the Near East, have became.
It's called ADOPTION, not stealing.
satoofi93 1 year ago
@satoofi93
well, how about I make a car exactly from Mercedes plans, and if they make any complain, I can say that it is adoption !!!!!!
( sorry if I said badly )
kittleboy 1 year ago
@kittleboy Are you seriously comparing cars to kabobs?
Fine, next time we Iraqis want to eat something, we'll go and learn aliens' food and I'm sure they wouldn't care because they're far ahead of your mentality.
satoofi93 1 year ago
@satoofi93
I didn't day all Iraq people, did I ?!
Only those who called this Iraqi !!!
This is true for all people, also for Iranians.
As you are completely aware what some people are doing by trying to change " Persian Gulf " name to " Arab Gulf ".
You know my point now ?!
kittleboy 1 year ago
@kittleboy Kebab is one thing that's been eaten by Iraqis long enough to be considered a native dish. Yes it's Persian.
What about Iraqi Persians? Can't they claim kebab to be Iraqi since they're Persian and Kebab is Persian?
satoofi93 1 year ago
@kittleboy away from political issues, culturally Iraqis & Iranians have many things in common. I visited Iran many times & i tasted their Kebab but it is different from Iraqi Kebab coz each nation has its own mood.
... my greetings

and shia and sunni dont hate eachother, please dont fall for the wests mind trick of trying to divide everyone. i have never encountered a shia person in my life who hated me because i am sunni, and vice versa. the only shia and sunnis i find that are the most divided are the ones from india, pakistan, afghanistan. those people have no sense of unity and would be hating each other regardless of what religion they follow. arabs are very nice people in general, the best in fact :D
issareign 2 years ago
read the book called "the arab" written in the 50's by a british lord. he describes the arab race very well. we are a "sister people" of the white race (most white races there are different types) because arabs and semites in general are among the most decent hearted people in the world.

howitzer...this video is about food. stop bringing your religion into this. I bet you are not even religious, we know iranians are fake.
salman...the way you word your sentences don't make sense.
how do you come up with the idea that she is a kurd??? LOL
my mom, aunts, cousins, Iraqi friends all have the same accent and we are not kurds. like I said, iranians are fucked up with their sectarian ways. look at you starting drama over kabob. pathetic.

I'm sorry for the owner or who put this subject,I beleive this is an iranian food and definitely is not Iraqiiiiii,Iraqi people want to be iranian but it can not happen with stealing our culture and tradition.
salman5903 2 years ago
you're an IDIOT. kebabs are MIDDLE EASTERN not just iranian
yrknck1 2 years ago 2
You should ask other middle eastern peolpe that do they have the same food or not.
Anyway,I dont want to argue with you because you are suffered by many things.
salman5903 2 years ago
salman...
Atilla3 2 years ago 2
Thanks for your comment
Just for explanation: I suposed this lady is not Iraqi, she is an Iraqi-Kurdish lady, because of her accent.
Some of (not all of) kurdish people declares that they are more Iranian than Iraqi.
Second you cannot compare your culture and antiquity with my country as you were part of (very small part) Iran and your country is independent near 75 years from United kingdom.
You sholud know this,do you?
they dance like women but they dress like men not like your men dressing

Look at her surname; it is Nasrallah. She is Shi'ite thus you can see the Iranian/Lebanese influence.
Howitzer909 2 years ago
please take your sectarian ass somewhere else.
Iraqis are not sectarian by nature. please go back to your shit hole iran or ze lebanon. ty.
yrknck1 2 years ago
that was to salman5903 and howitzer909
yrknck1 2 years ago
Howitzer,
so what if she is a shiite.

I'm shia myself you dumb stick.
It wasn't a cheap shot, I was highlighting the geo-demographic background of this type of food.
Talk about thin skinned.
Howitzer909 2 years ago
You should really read about the history of kebab and where the word is derived from. Then you will see that it has nothing to do with iran.

geeeeeeeeessssssssss who gives the damn, I don't care as long as I go to Iranian restaurant, eat Iranian food, which I love the best ,I don't care where it comes from or who makes it first. I see it Iranian food .PERIOD. bye the way nice guess, I'm in research but not food.
sakinehbs 2 years ago
Sakine... Also just because I eat chineese or indian food in these Swedish restaurant does not make it swedish does it.
With that lousy empirical conclusion we should all be thankful that people like you dont work in research or any other important place.
Atilla3 2 years ago 4
Sakine my persian friend,..
Atilla3 2 years ago
why was you arguing about this? lol
it seems you have some hate in your body.
just chill dude, but i must say that Iran has much more history and culture than iraq and if you want i can list many reasons why iran is a far superior country than iraq will ever be. TRY ME

i must say Iranian gays are quite tempting and good-looking but too bad homosexuality is not tolerated in your country isn't it?
why don't you guys stop fighting? you see, there are plenty of Iraqi and Iranian restaurants in my country (Malaysia) and we welcome both of them with arms wide opened. i don't want to see people bring this kinda conflict into our country.
Berrymore84 2 years ago
