    First of all the meat must be half lean beef and half lamb rib meat, otherwise it will be too dry and gets tough after cooking. As for the method of cooking, it must be cooked over charcoal fire, oven is not hot enough and dries the meat without getting the fat out.

    The maximum temperature of the Home Ovens is 300 Celsius, but charcoal heat can get over 1000 degree. Let us put it this way, charcoal fire is used to melt metals!

  • I watched your video yesterday and made the kebabs in the evening. They came out great. Thank you for the impeccable guide. I did not have any skewers but was able to roll the meat and placed it on an oven tray. The fat separated and i was left with good tasty kebabs. I used gram flour instead and added ginger garlic. YEY! Thanks again.

    To prepare a batch of Iraqi kebab enough for making six sandwiches, mix one pound of meat (traditionally a mixture of beef and fatty lamb) with one small grated onion, ¼ cup of flour or breadcrumbs, 1 teaspoon of salt, and ½ teaspoon of black pepper (optional: ¼ cup finely chopped parsley, and ¼ teaspoon each of allspice, ginger, and chili pepper, all ground)

    even mediterean food like italian or greek food...based on the ancient great cuisine of persians (doesn t mean others cuisuines are bad!)

  • I'm Armenian from Beirut and this is how we made it in Lebanon and now in the USA - we call it luleh kebab, you did it perfect - the best is to have with sumac and onion and parsley it is so DELICIOUS

    The reason is because the Turks, Arabs, Persians and Assyrians have a wide and great culture which can be seen from their numbers, languages, food, art etc. So they don't need to claim other cultures inventions like the kurds does.

The reason why we don't get into this stupid fights is that we never argue over what is who's or about "my sect is the right one because..." because that is a fight where only the third person wins, also its a never ending fight.

    we used to dine at Iranian restaurant i can say their kebabs are juicy and delicious. the same holds true when i visited an Arab restaurant (founder is from Jeddah) despite of their kebabs are a bit different but also without equal. (i can eat up to 10 pieces with hummus dip! yes it's an excuse to binge)

    the lesson of kebab telling us that if we see things from a slightly different perspective there will be harmony.
