Another MGS retcon slip-up - Snake refer's to Olga's child (who we know to be Sunny) as a HE. I find this one interesting cos throughout the whole game Olga never says he or she, she just says MY CHILD or MY BABY. Was that just Snake presuming it's a boy, then?

I believe that Snake was referring to the baby as a "he" just for the sake of using a pronoun. It'd sound a lot weirder if he said "it" wouldn't it? :3

But also, typically people use male pronouns/terms when referring to something that includes both genders or something that's genderless. Like say you walk into a party with both males and females and you say "Hey guys." It doesn't mean that you're excluding the females- only that you're referring to everyone.
