  • @wisdomandchange777 I suppose you could use brown rice as long as it is not sticky. I never tried it myself, not much fan of brown rice despite it is a healthier choice.

  • @Nekni1 Depends on the antistick being used in the pan. If it's teflon, then sure... but im not sure this is teflon, looks like it could be a high temp powder coating, or perhaps even straight steel, in either of those cases, metal is fine. If it's teflon, then, yeah, i agree completely.

  • I agree too much rice at a time.... better to do it one more time if you have big family.... plus it doesn't realy get fried when it is too much .. i feel it's perfct when it is puping out lind of.... the key is very hot pen and fast cook

    I think its for the health benifit not the taste. Olive oil is way more healthier than normal oil.

  • Love all your recipes. I've been looking for a recipe for Chicken Cantonese that is served with rice and Chinese Veggies. All I remember is the chicken is fried, cut in bite size pieces, and has a delicious sauce and I always ordered extra sauce and toasted almonds. Sooooo good. Thanks. Hope you can help.

  • i have had some people tell me it's really important to leave the rice overnight in the refrigerator after cooking and this long prep time has always put me off - i notice you dont do that?

  • @smile221 It's mostly cause you want the rice to be dried when you cook it or else it'll turn to mush, it's easy for most chinese households cause they eat rice everyday and using the leftover rice to fry for lunch the next day is easy to do... but if you use her method (very important to leave the rice in the water for 30 min) you will still get the drier rice for frying just not AS dry as if you left it overnight.

  • Thanks for your thoughts on fried rice. I think a few others have asked this before...some takeawy places have a yellow color fried rice. Do you know what makes this color?

  • @pmaapl I think that type of the rice would be Indian saffron rice. The reddish dark orange color of the spice gives food a bright yellow color with a subtle aroma and flavor. Saffron is used in many Indian rice dishes and desserts. In Chinese cooking, we most like to use soy sauce to gain a little red(brown) colour.

  • @Rovo188 I meant the egg fried rice, you can either cook the egg first, or pour the egg direct into the rice then fry the rice. Of course, there are plenty of fried rice recipes without eggs.

  • Dear madam, thanx for your vid. I tried this many times, but I'm missing this authentic taste what I get from restaurants. I spoke to someone who told me that restaurants uses the juices from roasted pork, chicken dishes in fried rice. Could this be correct? Is it possible that the flavour comes from that or perhaps because in restaurants, fried rice gets flamed?

  • @Ajinomotjo Not very good cooks from Chinese restaurants might use MSG to give 80% of the flavor, but we all know that's not good. More genuine cooks usually use a blend of some of the following spices: chives, garlic, ginger, celery, watercress, onions, green onions, and a bit of sugar. And the key is to use a large wok with very high heat, and a very quick stir fry with the spatula.

  • what i do is simply cut veggies while the rice is cooking and addthem to the wok cook until tender then add in rice and let it simmer for about 3-5 minutes then add soy sauce and let it cook for about 2 minutes then consume and enjoy

  • How did you get your rice not to stick in the pan you boiled it in? Mine always sticks and I have let it soak even when I spay the pot first.

  • @lidsman2221 often the rice will stick to the pot when u boil the rice, so try steaming the rice and it will definitely taste better.

  • I've just made this, it's ok tastes a bit too oily, perhaps I've used to much.. But it tastes like there's something missing... Different to my local takeaway? Nut oil? Seseme oil? I would love some help please.

  • @bigsy789 The fried rice from takeaways won't use nut oil or sesame oil, but cooking oil(usually vege oil), because the cost price will be too high. They use leftover rice, very dry and cold, fry the beaten egg first with a little salt, but no dark soy sauce , add the rice in to cook until the rice is very hot. Then add some soy sauce(both dark and light),chinese rice wine and monosodium glutamate. I don't use MSG, hope this helps.

  • @bigsy789 Most likely what u tasted was the "wok hei". The "burnt" frangrance using a very high temperature cooking method which hard cant be achieve using conventional cooking stove. However, if you wanna have more taste to it, i recommend to stir fried some shrimps too.

  • @bigsy789 Hi there, i believe ur rice is too moist when added into the wok, as"oil doesnt mix with water", and that is why takeaways use leftovers where it is dry and hard. did u see at 3:50, the egg sucked up all the oil? yes eggs suck up a lot of oil and u have to aware that. i use olive oil, it is tasty and healthy. and at last the key point to fried rice is frying the rice.

  • @bigsy789 and i believe you fry steaks before, u see how u dont just cook it, you want it to be browned? similarly, the key point to fry rice is browning the rice without burning it.(hope u understand this). be patient if u have a electric stove, but i recommended a gas stove( the strong ones). i usually fry the rice until i smell a delicious rice flavour then add the egg. then keep frying, then vegies(optional) , then soysauce to the side of the wok then salt and pepper. DONE

It is her take on egg fried rice and if you ask me it looks dam good :) seriously people like u must have no friends.
