The recipes have generations of trial and error behind them, and they're meant to allow numerous wet and dry ingredients to coalesce into a chemically changed product. Screwing up is bad because wasting food is bad, which is in turn bad because some people are starving. A botched cake will have to be thrown in the trash and will end up eaten by rodents, insects, bacteria and fungi.
