I'm sure the docs mean well.. the bottom line however is that we get minimal/no training in nutrition in medical school. Maybe a couple hours on obvious nutrition deficiencies, i.e. scurvy, kwashiorkor etc. However, many food enzymes are broad-spectrum, meaning that they work in the stomach pH for a long time before being broken down.. also, it takes food a long time (up to hours) to travel from the stomach to the small intestine - plenty of time for autolysis and digestion by the plant enzymes.

Personally I've seen a dramatic improvement in health going from a (what I think) healthy cooked whole food diet to a raw diet.
Not saying that it's what works best for everyone, but raw food has helped so many people to improve their lives and even saving their life, so calling it stupid is rather.. well.. stupid.
As a medical student, I can understand his position. He is a doctor in the western medical tradition and as such practices evidence-based medicine, and there is no evidence supporting raw food (why would there be, who would make a profit from the results?). He is also right about the stomach acid breaking down the proteins and enzymes into amino acids.
Then why am I a raw foodie? Well, I'm a whole foodie first because when I have to make everything myself I avoid all the processed foods with their preservatives and artificial additives. I go the extra step and eat raw because I know that a huge percentage of the vitamin content of food is lost upon cooking and using multi-vitamins is a sorry way of trying to compensate for that.

Sure, cooking helps break the cell down. So it depletes the vitamin content but makes what is left more available to you. So do you get a net increase in vitamin content with cooking? Don't know. I'm pretty sure, however, that juicing would be the best at getting into the cell without compromising its contents.

by the way cooking does make carbs more available in plants but they are bad. you get caramelized cooked carbs that make you fat. there was an experiment where pigs were fed raw potatoes and cooked ones. the ones eating cooked potatoes got fat, the others didn't. cooked food is poison. anything raw is better. raw fats are fine. cooked fats are bad. cooked sugars/carbs bad. raw good. cooked protein coagulated and bad. raw plant protein = best and most bioavailable and usable protein.

if you blend tomatoes you can absorb the lycopene just as well. cooking them may "liberate" some nutrients if you don't chew well or have poor digestion but cooking also makes food poisonous. there are well known carcinogens that are produced by cooking and you also loose valuable vitamin and mineral content. cooking = coagulation, caramalization and destruction. it severely alters the structure of molecules and creates heavy metals.
