I love this guy! He tells you the less glamorous, yet crucial things - ie "...this prevents the cream from burning." It's as if there's suddenly a genuine chef out there, actually telling us how to make stuff properly without having to patronise his way onto our tellies. What's the catch...??

Thats wrong, if you put gelantine into boiling cream the gelantine will loose its effect and the pannacotta will be fucked.
