take a look at 2:40. white is up a pawn in this position, he can play Nxd6 check, winning another pawn, king comes to d7 (only move) then Nxb5 (another pawn won, which makes a total of 3 pawns won) cxb5 (knight lost) Bxb5 (4 pawns won total) + check and white is down a knight and black is down 4 pawns. which is bad. also black cant castle anymore and his king isnt exactly in a good position. so i strongly suggest you re-evaluate this against stronger opponents.
I agree with @Exkaliki10.. I think it's much better and more aggressive.. Although the winning material is only just about a pawn, after 1.exd5 cxb5, Black still has a good position to attack by putting his Knight to f5.. :)
@GhostWoof Take the knight because if White used their bishop to block the check you put on their king, then the b2 square is open to your queen for taking their rook with no resistance. And if they see that and move their bishop back, then you can move your queen into the checking position again and take their white bishop, haha. :D Hope this helped you.

(on a lessor note, I have "invented" a board which that becomes an impossibility.)

great question. If we move d5 then we let white move the very powerful e5, attacking our knight on f6. The only place our knight can go is to g8 (if we move to d7 we are mated). Obv we don't want to move our pieces back after we have already developed them. Also keep in mind that after we play Ng1 then he can still come to Nd6 (not checkmate) but now his knight is supported by his pawn. We have to move our king and this is very bad for us. Hopefully this helps.

However, you didn't mention that P-Q3 is also the prelude to a Reti game (although I don't know the name of the system.)
It usually goes 1. P-K4, P-K4; 2. N-KB3, N-Qb3; 3. B-B4, N-KB3; 4. P-Q3, ....
Not an easy system to counter. Too aggressive, one pays quickly...or, too quiet, and White overwhelms the center.
So, 4. .... N-K2 offers to White the added benefit of Black being closed back up, less developed, and behind in developement....
I mean...
maybe..., huh?
