I don't think sexuality is as flexible as you think it is. Sure, its certainly more fluid than saying 'you are either straight or gay', but as for whether or not its changes over time for a large amount of people... does anyone walk around anticipating a shift in whether they find men or women attractive?
I think it is largely unchanging. Certainly more flexible than one's race, but not a fluctuating aspect of most people's lives.
