I started out with ilevel 340 and 130k as a tank in our 25 man raidgroup, you'll be fine :).

Also when you get to about 150k, just stack mastery instead of stamina. Mastery rocks for prot paladins/warriors.

My hp is 160k unbuffed, with 1 480 stam trinket. If i had 2 equiped it would be 168-170k unbuffed. The normal hp for a cataclysm tank (just starting to raid 10 or 25) should be round about 150-155k hp unbuffed (provided that their expertise, hit and avoidance stats are at a reasonable percentage).
