I usually like your recipes but I have to say that this carbonara is not the "original" one at all. Carbonara is supposed to be a Roman dish and in Rome we use pecorino instead of parmigiano and definitely we do not put cream. I've seen using cream in many restaurants abroad but never in Rome. Maybe in Naples you use cream but if it is so it's not correct to use the word "orginal".

If you came from Naples, you HAVE to do the pastiera napoletana (my favorite dessert for the record). For your carbonara just add some cooking water at the end, to make it creamier. Personally I don't put the onion, and mix parmesan and pecorino. Some prefer to use guanciale (ehm... I don't know how translate it) instead of bacon/pancetta but I don't really care
i just did this a while ago, and this is really good... but for all, i would omit the onion next time...and add a little more cream (because I like CREAMY pasta carbonara), i dont like the traditional version... anyway, a definite keeper... good job laura!

@jini6046 Whipped cream is cream that is.. well.. whipped already. Whipping cream on the other hand, is different than heavy cream. Heavy cream has more fat content. It can also be called heavy whipping cream I think.
@jini6046 if you whip heavy cream it becomes whipped cream. so yes, heavy cream is also called double cream or 'heavy whipping cream'. it has a thicker consistency than milk and more fat content.

My recipe of Carbonara might be weird to a whole lot of people...but because I'm not a fan of bacon at all, I like to saute ham, mushrooms, and green peppers in olive oil with the onions. Then I add some salt n pepper with a cup of heavy cream, add Parmesan cheese, bring to a light boil, then i like to add a teaspoon of cornstarch with 4 tbs of milk which makes it really nice n creamy. I also do not add the sauce in the pasta. I leave it in the sauce pan to reheat it the next day...lol...YUM!!!

I've never used cream in it. I usually use garlic, pancetta (when available, very hard to get around here) and eggs. To make the sauce less thick, just add a tiny bit of the pasta water into the eggs to temper them.
Also, Pecorino if you can get it, but Parmesan is a good substitute.
