  • best steak i ever made was from alton browns recipe, the best!!! People love my steaks now, I like to add thyme, incredible flavor, and deglaze the pan with balsamic viniagrette for some truly awesome sauce!

  • @209elhefe He runs a business and needs to be the hardass to push his people to get the job done when it's not done properly. Hell's Kitchen is all about that pretty much, the reward for the winner is huge and the expectations is high.

    He knows how to make great chefs and he knows how to cook. The business he's in is no playground, you do the job and you do it well or you're fucked. About 26% newly started restaurants close the first year, about 59% after tree years.

    It's a tough business!

  • @SimplyXxXWild Grilled steaks are an abomination. Dry heat with a well marbled piece of meat leads to shoe leather. All that sizzle on the grill is the juices being evaporated in fire. Stick to your well done, under seasoned squares of cowhide you dirty inbred hick.

  • @Stabilizerification - obviously you are a novice to grilling. The superior method in cooking steaks. You sear both sides of the steak on direct heat for 1-2 minutes...this seals in the juices. You then transfer the meat to the indirect heat on the grill and cook to your liking. The succulent taste is something Gordon Ramsey only WISHES he could achieve.

  • @SimplyXxXWild "Sealing in the juices" is a myth. Searing evenly does push the juices to the middle, but indirect heat,- with steaks or any meat - is a massive fault. Steaks are usually relatively lean, the marbling being nowhere near the amount of fat needed to retain moisture from dry indirect heat, as, say a brisket. And as for him not 'achieving' anything better than a grilled steak... well his Michelin stars would like to have a word with you.

  • @Stabilizerification though simplywhatever might be a little dumb, if your steak gets dry and chewie over the grill or in indirect heat, then you might want to either change your technique or your butcher/meat supplier.

    The only shoelaces I make are on purpose, as my and other GF's wont eat anything that is even a little red(yes, I know, they should stick to sausage etc^^).

    And somehow, without a grill/dry heat, it's tough to achieve a thin sort of "crust" on the exterior

    It's a type of peanut oil, you could also substitute canola or blended oil (which is like 70% veg, 30% olive)

  • @enh4life All ovens are different, so he cant simply say, "cook at a six." However, two ways to tell if your pan is hot enough. 1: the oil will start to shimmer and smoke a bit. 2: When you put the meat in, it will sizzle and hiss quite a bit. This indicates your steak is searing off, so non of the flavors/juices drain out. Hope this helps:)

    The rangetop? Set it to the highest amount with the oil already in it and wait. Commercial restaurants have ranges that'll get the pan smoking within a minute, but most homes, ehh, can take a while depending on your hardware. But a basic sign is a shift in the texture of the oil; it'll get "looser" and'll shimmer more. If the oil starts smoking a bit, it's damn hot (but perfect for blackening). Always put your steak in in the direction away from you to avoid oil burns :)

  • @PropMonkey87 figured that you sound like someone passionate about cooking steak so why not share my way.i put a few tablespoons of oil on the cuttingboard.then put the rub and or seasonings on the steak and rub them into the steak very well with the oil.as you said,have a pan on the stove at max heat.let it heat for a few min.but dont put any oil in the pan.just the oil that has been rubbed on the steak(thick coating).then cook the same way as shown in the video.including the butter to finish.

  • God kills a kitten when ANYBODY requests a juicy steak well done. Why would you? It's damn chewy at that point and in the case of steaks, the longer you cook it, the drier and tasteless it becomes. I prefer Medium pink inside with a seared outside!

  • @PokeyBessie not even that, cooking any type of meat too much ruins the health benefits there are alot of irons in beef and pork but if you cook to welldone you just took a healthy meal and made it unhealthy as the proteins and iron in the steak is lost in the cooking.. medium is best for steak as it you still keep all the healthy bonuses and its not too pink :P

  • @1wantc0ff33 The reason why you should let the meat rest is because when you cut into the meat right after you take it off the heat, all the juices will run out. Letting the meat rest for a little bit allows the meat to relax so when you cut into it, you don't lose all the flavour.

  • @1wantc0ff33 The best way to explain it is like, when you get a fresh and hot pizza you know how if you cut into it right away all the cheese and toppings are too melty and sliding off? The juice in meat would just like squish out when you cut into it. If you let it sit you can keep more of the juice...which is basically flavor of the gods.

  • @HeadlessEye Yeah actually, cooking it to that stage ruins the meat more or less. You lose that tender juicy meaty goodness that is steak when you cook it that long. Mid rare is about as far as I would cook a steak.
