As for getting roasted for celebrating - the press is just trying to make a story. That said, the 'bad boy' image sells tickets, and pumps the crowd for the final. I hope he keeps it up.
I understand and i know how many rules and behaviours are ogten required in the japanese society, and by the way most of the times i also agree with that.
But as you said i don't agree witht he way they often criticize Asashoryu, since he's really the best out there and they should probably talk more of that instead of talking of his celebrating. But that's of course just my gaijin opinion. ^^

it excuses, in Japan understand to you if your you write water: " mizu " or " 水 " ???
they can understand of the two ways???

ASASHORYU is the best SUMO wrestler and he will be greatest Yokozuna for all the time. God bless him
