  • @hokuplemdro It was amazing 0.0 seriously,... it's very simple but my house smelled amazing and it tasted soo good. The only thing is, i might have used a little too much olive oil >.> and for some reason my potatoes stuck to the pan a little. but they were all crispy and delicious:D

  • I combined this recipe with your recipe on roast chicken and butternut squash bake. I used 2 small-medium potatoes, half a butternut squash and 2-3 carrots, seasoned them with salt, pepper and chili. I used poultry seasoning, lemon juice and fresh parsley as the chicken marinade then poured the rest of the leftover marinade on top of the bake before I put it in the oven. Mine cooked for 45 minutes and it came out SO delicious!!! This is my boyfriend's new favorite dish :)

  • i soak my chicken breast in milk and no matter how long i cook it it always comes out VERY tender and juicy.....just a tip that i ran into

  • Hi Laura! I have a question.. Will it make a difference if I'd use canola oil instead of olive oil? Here in our country, olive oil is kind of expensive. Will vegetable oil be alright as well? Hope to hear from you soon.

  • If you do the marinade for the freezer, I assume you leave the potatoes out. Do you also leave the garlic and lemon pieces out? I'm thinking that for freezing, you would marinade the chicken in the spices you use, plus lemon juice & zest, olive oil and seasoning only. Is that right?

  • I made this today and the kids loved it. I used butternut squash and potatoes with a little brown gravy. The kids said this is something that I needed to keep on the list of dinners to make. TFS

  • IMO the dark meat is better, people just don't really realize it, kinda like Lobster used to be when they thought it was the devils food. Dark meat is closer to duck, pheasant ect. and has much more flavor and oils in the meat. In beef the most marbled and fatty cuts are the most expensive and coveted, somehow in chicken it's the oposite. Good recipe, just let it cool a minute first! :)
