Yes you can connect your joystick (if you're referring to the nunchuck), but you must first unlock the option first. When you are able to connect the nunchuck, you can look around with the joystick, and shoot with C and stop your engine with Z (this allows it easier to fly the plane without having to press all the buttons on your WiiMote).

And by the way, you can quickly twist your WiiMote sideways to do flips to the side.

Natal is a concept only good for minigames and it will never take off like the Wii remote as it's not as well thought out.
