Just click record file in Virtual DJ and begin mixing. When you are done click stop recording. I use Windows Movie Maker to make the actual videos. I just insert the mp3 file of my mix into the "Audio/Music" part of Windows Movie Maker and then insert the Virtual DJ picture into the "Video" section and then I save the movie file.
