It could be weight, the potato might have weighed more than the ice, also the ice may have had some air bubbles in it causing it to break apart more easily on impact.

What we do with mine, crank it up to 150psi. Wad some paper towels around a golf ball. Lube it with lots of cooking spray, and fire. I'm sure it will go through it. Ever golf ball we've fired we've never found. We cleared a smallish lake with a golf ball.
