In my area we have primarly silver maples and in my opinion and again my opinion there is no real taste diff. between the diff. species of maples. The sugar maple has the highest sugar content per gallon of sap than the other trees. we also tap boxelder and birch trees but it takes almost 60 gallons to one but tastes really close to regular maple syrup. If you sell yours maybe we can do a trade of syrups to get a taste of each others product? let me know I will send you some.
I would love to try something from somewhere else I will let you know when I get some bottled up. also do you use the pint jars or 12 ounce jars.
