Aunty, you're so lucky. Since you don't use onions and garlic, you don't have to deal with crying, odors, and any of that nonsense. I think I will start eliminating those too in my diet. I am sick of them too.

@155qwerty155 I live in rural NM, in a small town, and our health food store has all these ingredients. Shouldn't be hard if you have a decent one of those. Any good HF store will have spices in bulk too so you can buy a couple Tbls or so, and not spend a bundle on a full bottle of McCormack's at Albertson's. Good luck.
BTW spices are the things that make Indian food so yummy. If you *can* find them it will make all the difference.

you can get hing at an indian grocery store... I've never seen it anywhere else. Its supposed to have a garlic/ gingery flavor, but I've never used it in my cooking before, so I don't know for sure. I feel like my dishes are fine without it, but I cook mainly punjabi/ pakistani dishes.

Hing is also called Asafoetida. It's resin from a plant, usually found in a powdered, compounded form. It smells sulfury when raw, but when cooked, adds a nice smooth oniony leek flavor. It is common in lentil dishes and in foods as a substitute for onion flavor for people who don't consume underground foods, usually for religious reasons.

Hey this kurma is incomplete without onions and garlic. People who like these can add them to make the kurma more flavorful. Also instead of plain milk, coconut milk makes the dish tastier.
As someone pointed out, navratan kurma is a sweet dish combining fruits with vegs. Anyways, this is a nice dish, maam.

Yummy! I garnish dishes like this with thinly shredded dried red chili. It is becoming very popular. I use the Choripdong brand from Seoul Trading Co. And no, I do not work for them, haha. And if you cannot find paneer, try plain farmers' cheese. Great recipes Manjula!

I am glad paneer can be substituted for tofu since where I live, we don't get paneer. I also prefer my kurma to be sweet so I would add raisins and dry fruits but that is a personal choice. Thank you for the recipe!

asafoetida
A resin extracted from the oriental umbelliferous plant Narthex asafoetida, with a bitter flavour and strong odour, used widely in Oriental and Middle-Eastern cooking, and in small amounts in sauces and pickles.
Asafoetida has certain medicinal uses and most commonly is used as a digestive aid. It is reputed to lessen flatulence and is often added to lentil or eggplant dishes in small quantities. It is also said to be helpful in cases of asthma and bronchitis.

there seems to be an awful lot of prep. is there any special tool, besides a good knife, that would help make this quicker? like what do u use to ground the ginger?

corn starch I use for thickning the gravy if you are using onion you will not need this

No you do not have to use the paneer or you can substitute paneer with tofu.

I am glad paneer can be substituted for tofu since where I live, we don't get paneer. I also prefer my kurma to be sweet so I would add raisins and dry fruits but that is a personal choice. Thank you for the recipe!

U can use Tofu in place of paneer or totally avoid it. u may add chic peas for protein

Seriously, this is the best idea ever. My parents and in-laws both live here, but one set is 3 hours away and the other lives on the opposite coast...so it is very nice to be able to SEE how food is being made. I'm a newlywed and you are a Godsend for a new cook!
Also, I had never ever make rotis ever, but tried your aloo-paratha recipe and everyone was amazed that I made them!!!

In your video you say to use 1tsp of cornflour whereas in your list of ingredients it says 1/2 tbsp cornflour - which is correct?
& is 1/2tsp of red chilli powder sufficient for the quantity stated.-thanks
