The challengers are most likely fans of the show prior to becoming a contestant, so you can see the profound respect Rutter had for Michiba going in. The ending was a great gesture from one chef to another, stating his admiration. For a minute there, I was made to forget that it was a contest.

Unless you are stir frying or similar I think capsicum is best prepared when you can slow cook it.

As an example try preparing a dish where you remove the inner bitter white part and and skin before you 'sweat' the capsicum flesh (prior to adding the main ingredient). It will bring out the full flavour.
