Well, it does rotate smoothly when running in the actual iOS device. You are probably running it from the Unity editor by using the Unity remote, aren't you?.
You will always experience that lag while testing from Unity remote due to the WiFi Connection that's all, but it doesn't mean the script is not working properly. In the end, you will deploy to the device, and it works like a charm from there, trust me.
