i dont really consider this as salsa - due to the addition of vinegar ( balsamic ) and no corriander also known as cilantro or chinese parsley into the mixture. as for canned tomatoes and chillies - that is fine. but do not add in the sauce or brine as it is high in sodium. this is really unhealthy in my opinion and not mexican or latin american - rather its a fusion salad dip - not real salsa.

Its hard to find, only 1 per side of beef, and most of it is turned to hamburger or sent west. You won't likely find it in a display case at a supermarket, I would ask the butcher directly, try to find a real butcher shop. Some butchers refer to it as bottom sirloin butt also.
