  • u might be a great chef, but stay away from indian cooking. This recipe is absolute crap. its going to taste yuck if u add that much turmeric. know your spices before u cook with them...

  • @indian2k1 You do know tikka masala was invented in Glasgow? It may be inspired by indian cooking but is not indian cooking, and I'm sure you haven't cooked it either, so you have no idea how it tastes.

  • @Oafing Its a common misconception that CTM was invented in Glasgow. Yes, the crappy british verison may have been concieved in Glassgow, but the real CTM did originate in Punjab. The Glasgow verison may have heavily borrowed from the Indian version. Its just like saying that Pythagoras invented the Pythagoras theorem where as it was documented and in common use in India and China as early as 8th Century BC.

    And yes, I have tried and love the Glasgow/ british verision of CTM too.

  • @indian2k1 No. Chicken Tikka Masala, the spice combination and tomatoes etc were all concocted to make Tikka Masala in... Glasgow. So, it was therefore created in... Glasgow.

    Theres absolutely no difference between tin tomatoes and fresh, when mixed, and cooked. Just because they're in a tin, doesn't mean they're artificial in any way...

  • @GrimeDaiIy - Tomatoes are canned at their peak of freshness. Using unripe tomatoes, or artificially ripened tomatoes (ripened with ethylene gas) is what a "fucking amateur" does. I've worked in some of the finest restaurants in the world. QUALITY canned tomatoes are used year-round because they have superior flavor. Even when tomatoes are in season, restaurants won't switch because the taste of the dish would be affected, and consistency is vital.

  • Lot of comments from people criticising every little thing, cooking is an art form, there are many ways to create a particular dish.

    Tinned tomatoes are fine, as is using a blender (restaurants liquidise many sauces). On to the dish itself, we've made it three times thus far each time tweaking it to suit different palettes, in truth it didn't taste anything like the Tikka Masala we're used to, none the less it is an extremely tasty dish and has been added to our indian recipe list, many thanks.

  • I just tried this tonight. WOW! What I did was make some sliders, middle eastern sliders. I took pocket pitas, quartered them up, brushed them with garlic butter, added seared chicken medallions, and put the tikki masala sauce in the middle to scoop up. WAS AWESOME!

  • I think the idea behind cooking is to make it how YOU think it should taste. First time I made this it was WAY too sweet, only added a teaspoon of sugar. I found using half a teaspoon of turmeric the second time around. I only used 1 and a half teaspoons of garam maslala too.

    Also those who asked WHY use tinned tomatos. Well to be honest, the ones you get in supermarkets these days are a bit tasteless. Even the ones on the vine. The Napolina ones are REALLY good.

  • @ChiefArthas 1/2 tsp chili powder, 1 tsp tumeric, 2 tsp garam masala, and then obviously 1 Tbsp sugar

  • Just made this recipe for three friends and they absolutely loved it! It is a very easy sauce to make actually.

  • 3/4 of a 'tea'spoon of sugar is enough.. one tablespoon?.. far too much!

  • Wheres the cream, almond powder, coconut powder, and lemon dressing?? This WILL NOT taste anything like you expect, as most people have tasted the BIR (British Indian Restaurant)/Takeaway version and become accustomed to that taste.

    Ramsay cant always get it right, is it any wonder the indians keep the secrets to them selves...

  • @SP330Y the cream was substituted with yogurt (a healthier version), coconut powder isnt necessary here cuz the sauce is already rich. Lemon dressing is optional. He already said its HIS VERSION. I live in India and know enough there are different versions of tikka masalas even in India, all of them are delicious in their unique way.

  • @media1981 Think this is more for what people at home can do. He wouldn't use things out of a can for his restaurants but for the average home cooker, they would immediately reach for a can. He's showing them how to do it. Good catch!

  • @hjpop - Not true. Tomatoes are only in season for a short time each year. Canned tomatoes are used in fine restaurants everywhere, including in the best restaurants in Italy.

  • @MrPlanx Didn't mention anything about seasons or availability. I'm just saying that he usually says he would never use canned stuff in his restaurants (and makes fun of people who do) since he places a high premium on fresh ingredients. But if this is for the home cooker, then canned is preferable.

  • @hjpop - Tell me, how many Michelin starred restaurants have you worked in? I cooked with Marco at one time. That's the guy who taught Gordon Ramsay how to cook. He uses canned tomatoes. Just not the cheap supermarket tins that you might be thinking of.

  • @MrPlanx I defer to your internet boasting about working for a chef I could really care less about (and can't verify anyway) Gordon seems to make the distinction that a professional chef should always try to get the freshest ingredients to make the best food possible. For the home cooker, it may be difficult to do so (cost or time) so canned would be okay. I've tried this recipe, it really comes out great! Thanks for the posting!

  • @hjpop - There are exceptions to every rule, and tomatoes are one of them. Tomatoes are only good when they are vine ripened. Unfortunately those are only available for a short time each year, and if you have ever tried QUALITY packaged tomatoes (especially the ones in the box from Italy that cost about $7 a package in the US), you would know how ridiculous your argument is. They taste better than any tomato you can buy in a store.

  • @MrPlanx The only absurd thing about this conversation is that you seem to think I'm making an argument about fresh versus canned. Gordon loves to stress fresh ingredients (see Kitchen Nightmares, any episode) so he will use fresh ingredients and stresses the value. For the home cooker, he knows that they don't have the time or the money to always get fresh. So, canned is okay. (Really read the posts before you get all uppity...you just look stupid.)

  • @hjpop - No, you still aren't getting what I'm saying somehow. Gordon Ramsay does use canned tomatoes in this sort of application. So does Mario Batali (a Food Network "Iron Chef" you may have heard of), who also worked with Marco Pierre White, as did I. The mantra of "fresh and local" does not apply to tomatoes in sauces. The code is not REALLY to use "fresh and local", but to use the BEST. In the case of tomatoes, that means canned from Italy. Clear now?

  • @MrPlanx I'm understanding fine what you're saying, though you seem to miss the point. Gordon's use of canned tomato in this recipe, FOR THE HOME COOKER, is fine because most people who cook at home do not have the luxury to make the equivalent on their own. This was in response to someone making the joke that he's using stuff from a can. Not quite sure why you still miss reading everything. Context is key here, please do not forget that.

  • @media1981 I don't blame him. If you want tomatoes without seeds or peel in your dish there's a lot of time and waste. It's also cheaper because the cannery recovers what you would throw away and uses it for other things.
