Don't worry abut that email! Thanks for posting this series. With the screen issues, maybe try positioning the bottom screen before heating the strike water? That way you can get your hands in there ans possibly weigh it down with some stainless steel washers? Hard to say on my end of the screen if this will work, but worth suggesting?

@Jazzafish I was just thinking about that very thing. However, I bought a "splatter screen" used on frying pans, removed the handle, cut a hole in the center and slide that over the cloth filter now. Only used it once so far but it worked perfect that time.
