Just cause you can count with your fingers doesn't mean that you computers don't have their uses and just because they didn't have fridges 1000 years ago doesn't mean that you can't produce top quality products in more modern humidity, temperature controlled caves. :)
There is something ridiculous about a mass-producer of low grade plastic cheese talking about artisanal cheese. Sticking a label with the word "artisan" on it doesn't make it artisanal. The care and attention that each wheel of cheese needs, the natural grass feed, the use of quick-to-spoil raw unpasteurized, non-homogenized milk and aging of 2-4 years in caves surrounded by fresh mountain air would defy Sargento's shareholder definition of profits, scalability and mass production/distribution.
