I believe that the strings are grouped into courses, like on a lute. This means that each string (or most of the strings) you see are, in fact, two strings grouped together.
From the appearance (and then a search online to check out the oud) it is 5 double courses of strings (5 pairs of closely spaced strings sort of in a similar way as a 12-string guitar) and one lowest pitch bass single string... so 11 tuning pegs.
Im not sure to the specifics, but my uncles oud has like, 2 strings per string....get it?
its 2 strings close together, but it looks like one string in the video because it cannot capture the detail....i think the bass (thickest/top) string is actually 1 string.
there are actually 11 strings on this instrument, there are two strings very close to eachother on a few of the lines. so they are technically treated as one string.
Because with an oud the strings are done in groups of two so that each string harmonizes with itself. And then, in this case the base string is on its own, but some ouds can have twelve strings, whereas it looks as if this one has 11: five stages of two and one single. Hope that is helpful.

the middle east.... Its so hard to get a good one in the US. there's plenty of cheap-o ones you can check out on Amazon or ebay if you just want one to play around on.
