  • hold on a sec - no garlic? and i heard ginger gets rid of the unpleasant "seafood ordour".

  • @rileyjsg there is no unpleasant 'seafood' odour on a live crab.. you can put a little garlic in it adds to the onion sauce flavour.

However, try using this recipe list of ingredients for the full Singapore Chilli Crab Experience: half onion 8 chilli padi half large green chilli 1 TBL ginger 2 cloves garlic (large) 1 can tomato puree 2 TBL Tomato paste big squirt of tomato ketchup 1 TBL chicken stock powder 2 TBL Belacan (shrimp paste) 3 TBL light soy sauce Coriander (topping) 1 Egg steam buns 2 teaspoons rice vinegar 2 TBL Oyster sauce 3-4 TBL sugar corn starch if needs thickening

  • Using hand to eat this crab is a pain!!! Sometimes the spike can hurt you very often. What's even worst is that your cut will be made worst by the chili capsaicin.

    Just not for me. I'm a very lazy person that doesnt like to use hand to eat.

  • I lived in Singapore for about eight years and I just made chilli crab in the manner described. It was excellent and was just like I used to enjoy out at Pongol many years ago. I highly recommend this recipe.

    1. Mud crab 2. Egg (1) 3. Onions 4. Chili Padi (8)

    (The no. of chilies you put in depends on how hot you want the dish to be. Chili padis are smaller and alot hotter than normal red chilies.)

    5. Dried Shrimp Paste 6. Tomato Puree, Paste & Sauce

    7.Sugar (Apparrently you need alot) 8. Salt (1/2 teaspoon)

    9. Warm Water 10. Light Soy Sauce/ Brown Sauce (3 table spoons) 11. White Vinegar (1/2 teaspoon

    HOPE THIS HELPED :)

  • I tried this for the first time but with blue swimmer crabs, the sauce was AWESOME! I'll try with proper mud crabs soon. I might even experiment and use it as a sauce with king prawns.
