I lived in Singapore for about eight years and I just made chilli crab in the manner described. It was excellent and was just like I used to enjoy out at Pongol many years ago. I highly recommend this recipe.

I tried this for the first time but with blue swimmer crabs, the sauce was AWESOME! I'll try with proper mud crabs soon. I might even experiment and use it as a sauce with king prawns.

@rileyjsg there is no unpleasant 'seafood' odour on a live crab.. you can put a little garlic in it adds to the onion sauce flavour.

1. Mud crab 2. Egg (1) 3. Onions 4. Chili Padi (8)
(The no. of chilies you put in depends on how hot you want the dish to be. Chili padis are smaller and alot hotter than normal red chilies.)
5. Dried Shrimp Paste 6. Tomato Puree, Paste & Sauce
7.Sugar (Apparrently you need alot) 8. Salt (1/2 teaspoon)
9. Warm Water 10. Light Soy Sauce/ Brown Sauce (3 table spoons) 11. White Vinegar (1/2 teaspoon
