The dates are one of the amuse-bouche (stood on end, filled with a sweet creme fraiche type filling piped in) - I can peel, slice and yolk a quail egg in about 10 seconds, lol... (I stage two days a week at a French Haute Cuisine restaurant just for fun; hang-out with the always chipper kitchen brigade! : ) I'm just the grunt. =D

so will this be sweet? coz i dont see u adding any sugar... or is it the sweetness of the dates and ice cream? plus... i saw that ur dates are coated with some sort of syrup.. i have dried dates at home... will that do?
Hi! The dates are incredibly sweet. Our dates were not coated in syrup. We got them from Shields Date Gardens in Indio. You can buy the date crystals there, which are dried and work really well for date shakes. Dried should be fine. Just rehydrate them a bit before starting the recipe. Hope you enjoy it! Jason

Thanks for the tips :-) I had the pleasure of finding some fresh black sphinx dates at a local specialty food store. They are very rare and come from a few trees in Nevada. It was nice to learn about this shop and different types of dates.

Dates probably contain more sugar than any other fruit on the planet. Ice Cream has tons of sugar in it, and milk also has sugar added to it.
So yeah, it's probably sweet and delicious:)

You can put them in a food processor, or chop them with a knife. They will mix up in the blender as well.
