While I was playing assasin's creed, i noticed that the doctors wore bird masks to risk Contamination from patents. The rooks and these latin doctors wore similar masks. Maybe that's a clue?

The first phone call didn't work. Ian knew it wasn't his mother because of the "merry christmas" thing she usually says. So Ian told them that after ward... So C.J. could have told her father which is why the 2nd phone call worked. Or maybe Ian was forced. We don't really know.
