my nonna kinda did it the same but her recipe was,1 pound each beef and pork,1 cup each Italian bread crumbs and Romano cheese,5 eggs,2 teaspoons fresh garlic and fresh parsley (1/2 cup) fry in olive oil put in you gravy or sauce!!
You have to use fresh garlic, onions and parlsley(I put abit of chopped basil as well)-makes a big difference. And I would bake them or fry them to give them a proper texture. Then in to the sauce...:-)
Honest to God, I have tried this recipe and the meatballs are EXCELLENT! Very flavorful and soft. Thanks for posting Tony's recipe...they're my favorite so far.
If you're gonna trust ANYONE to give you a proper way to make meat balls, it's a cat named Tony! Plus, he's got 'drum' and 'guitar' in his name....damn, it's GOTTA be good!!
interesting rehydrating the bread crumbs, will try! I get my gr.beef at a farmers market, it's extra lean and really tasty but too dry.. Great tips ! Cheers.. MT
no hes right, the way they breed those chickens and have them crowded then off the slaughter house? not healthy for the chicken so then how is it healthy for you?
Nice video. Not a meat eater, but I've always wanted to make these for my boyfriend, the carnivore, and will do so tonight. =) This reminds me of how my Mom used to make them. The metal spoon on that metal bowl gave me goose bumps - get a wooden spoon or spatula! LOL
I found his recipe awesome! I didn't follow his cooking technique however. I rolled the meatballs and placed them on a cookie sheet sprayed with Pam. Cooked them at 350 degrees for 30 mins. Drained them on paper towels and put them in a freezer bag and placed them in the freezer. I just took them out and defrosted them to put in the spaghetti sauce, or made swedish meatball sauce and poured it over them or bbq sauce. There are delicious!
He has a very good point about the jewelry. Too many people cook with watches and rings and things on their hands. It's ok if you're cooking for yourself, it's your funeral. But if you're cooking for others is just not right!
I tried his method of making meatballs even though my actual recipe was for cocktail type meatballs the method of adding the breadcrumbs to the eggs and then adding water and letting set worked great. The meatballs were soft but held together.
The absolute key to soft meatballs is the the thing most people probably barely notice - it's the water. I put water in my ground meat when I make burgers too. It really works. I don't fry the meatballs either. If the mixture is good enough and the sauce is good enough - no need to fry. It's overrated IMO. I alsp put fresh bread along with breadcrumbs, but these look great.
Nice work, we liked your video very much so we embedded it on ChefCommons . com w/ link back and reference to Youtube. (Let us know if you don't wish for it to be featured)
If you DO fry the meatballs would it still be a 2-3 hr cook time for the sauce? help! Thanks for the video I am a complete novice at cooking but I want to make spaghetti and meatballs for someone, wish me luck!
Tony T you are one true Italian Stallion. Your Meatballs were amazing. My mouth is watering right now for them. The grated cheese just adds the greatest touch. You beat like a man with those eggs.
Tony T you are one hot man. I want to rub my meatballs in your mouth and then bake them in your oven. You are the man Tony T I can't wait to eat your meatballs
This video was wonderful Tony. I was brought up in a Sicilian household and this is exactly the way we made our meatballs and the exact time we cooked them as well! My friends tell me I am cooking my meat wrong when I do it this way but this is the most delicious way to make meat balls! Thanks so much. Phyllis
thnxs tony t. for sharing with us your family recipe my family and I love italion food. my wife and I watched your vid. alot of good info, now we're going to try and make it together and enjoy it with our family. will respond with results thnx again.

Great video, Tony!!!! Thanks a lot. I dont cook too much and I just made a marinara sauce from a random youtube recipe last night that was very good! Now I have to try your meatballs and I want to check out your sauce too. I probably will fry the meatballs to remove some of the fat. Super video, Tony!!! Great for those of us who are not only Italian but Italian in spirit. ;)

at the risk of being chagrin, i wonder about the wisdom of not frying those to drain some of the grease out?

Try mixing some pork and veal in there as well. That's my famiy's recipe and I haven't found a meatball that rivals them yet.

I must try this. Sometimes I add Italian sausage. Pork and Veal sounds good.
