The topping probably is the finely chopped mushroom stems, peppers, scallions, garlic, spice and any other ingredient that you might use as a pizza topping. I usually cut the peperoni into the mix and then add cheese on top to keep all the ingredients from drying out. These are always good no matter what toppings you choose.
